Memorial Day is to honor the men and women who died while serving in the U.S. Military. Many people celebrate Memorial Day in many different ways. Parades and picnics, barbeques with friends and family, going to the lake, Memorial Day weekend is the unofficial beginning of summer. Nothing brings family and friends together like food so some delicious crowd food and a little menu planning is a must so you can advise your guests what they should bring. Our tradition is to go to the lake for the holiday weekend and preparing as much of the food ahead of time as possible will make packing much more simple than hauling spices and cupboard staples you may not have at the cabin. One of my favorite crowd-feeder recipes is a citrusy slow-roasted pork to make Cubano sandwiches. You can roast and shred the pork ahead of time and then heat the … Continue reading

A little culinary nod to St. Patrick’s Day and the festivities with a recipe that includes potatoes, sauerkraut and corned beef – just not so traditional, a Latke Reuben.  So simple to make, no need to make your own hash browns because Alexia Hash Browns (frozen foods)  are wonderful! We doubled the recipe because we were serving a larger group so we used two packages of the Alexia potatoes. First you will want to prepare the hashbrowns in two batches for both sides of the latke. Cook them following the directions on the back of the package in a skillet until slightly crisp as they will crisp up more later in the oven. For this recipe, you want to cook them on one side and then flip only once to cook the other side. Flip them as one piece or in sections, whichever you are most comfortable with. An easy way … Continue reading

One of the great things about good food is that it can bring the whole family together not only eating it, but also making it! There is a great deal of discussion about childhood obesity associated with soft drinks and snacking at home yet over 32 percent of American’ Caloric intake is food prepared away from home and accounting for 41 percent of their food budget. Until we get back in the kitchen and begin preparing meals and snacks with fresh ingredients we will not solve the problem of childhood obesity. Cooking together will teach our children essential skills for life and it’s a terrific way to spend some quality time together as a family and is far easier on the budget than eating out. What better meal to celebrate the beginning of warm weather than grilling kabobs with everyone participating in preparation, assembly and cooking. The meat used in … Continue reading
