State Fair Home Edition
The Minnesota State Fair is in full swing. Do you plan on going? I know a lot of people that plan on attending the fair and a lot of people that don’t, for various reasons. I sure love the fair and missed not being able to attend last year. Unfortunately, this year, it’s also not in the cards for me. Chicken Satay with Peanut Sauce
Chicken Satay with Peanut Sauce are perfectly grilled chicken strips that have been marinated in a flavorful sauce. They are perfectly sweet and tangy and make an easy dinner. Don’t forget to drizzle the leftover peanut sauce on top of the skewers before serving! The recipe can be found here. Start by slicing the chicken breasts into strips and set aside. Then prepare the marinade by combining the yogurt, ginger, garlic, and curry powder in a mixing bowl. Add the chicken to the marinade and toss to coat. Cover with plastic wrap and place in the fridge for up to 2 hours. While the chicken in marinating, soak the skewers in water. I like to add water to a drinking glass and place the skewers inside.
