Loaded Brownie Ice Cream Cake screams indulgence!  The bottom is a thick fudge brownie that is topped with hot fudge, caramel sauce, ice cream, Oreo cookies, whipped cream, and more cookies.  It’s a rich dessert that you won’t want to share, lol! I think ice cream desserts can be enjoyed year-round.  Sure, they are necessary during summer months but every now and again I do crave a yummy ice cream dessert during fall or frigid winter months.  It’s dessert…it’s for any time of year.  This recipe in particular is a showstopper.  It’s rich, indulgent, sweet, and you don’t need a big slice to feel satisfied because it’s so dense. The recipe can be found here. Start by preparing the brownie mix according to package instructions, using a 9×13 baking dish.  Don’t over bake the brownies!  But do let them cool completely.  If you have a deeper 9×13 baking dish, use that.  The ingredients get piled high!  If you have a standard 9×13 baking dish that … Continue reading

Chocolate Peanut Butter Ice Cream Bars are one of my top 10 favorite desserts.  They are essentially cream sandwiches you make on a rimmed baking sheet.  A combination of chocolate and peanut butter makes up the flavors in the cookie with a hint of sea salt sprinkled on top.  The filling is basic vanilla ice cream.  However, you can use any ice cream flavor of your choosing.  Chocolate ice cream would make the perfect chocolate extreme dessert.  Salted Caramel ice cream would pair nicely with the chocolate/peanut butter cookies.  You get the idea!  Make this dessert your own. The recipe can be found here. Start by preheating the oven to 350 degrees F.  Generously spray an 18×13 rimmed baking sheet with nonstick cooking spray.  Please do not forget this step or you will have quite a hard time removing the bars! Melt 2 sticks of butter in a small saucepan over medium-low heat.  Remove from the heat and let cool slightly. … Continue reading

Homemade Buster Bar Ice Cream Dessert is one of those desserts you can’t get enough of!  It’s loaded with peanuts, vanilla ice cream, an Oreo crust, and a chocolatey-fudgy topping.  It’s perfect on a hot summer day…or really any day because ice cream isn’t limited to summer enjoyment 😊 It’s a dessert I would recommend for a dinner party or birthday party.  It has something for everyone, is filling, and will feed a crowd. The recipe can be found here. Start by softening the ice cream so it’s easier to work with.  Do this by placing the quart of ice cream on the counter for 15-20 minutes to soften while you prepare the other ingredients. Add the Oreos to the bowl of a food processor.  Pulse until you have fine crumbs.  Pour the crumbs into a mixing bowl and add 1 stick of melted butter.  Stir to combine.  The mixture will resemble wet sand.  Press this mixture into the bottom of … Continue reading

Summer is officially over, and fall is officially here!  That means the temperatures are starting to drop, but it isn’t quite cold enough yet, to stop eating ice cream and enjoying some warmer weather treats.  Before you finally put away your ice cream maker for the year, try out these 3 new ice cream recipes I’m going to share with you today. Banana Ice Cream Salted Caramel Ice Cream Frosted Animal Cookie Ice Cream   Banana Ice Cream is rich, creamy, and has wonderful flavoring so don’t toss out those overly ripe bananas (and don’t save them for the banana bread you are never going to make, lol).  Turn them into Banana Ice Cream instead!  It’s delicious and tastes just banana pudding but in frozen form 😊 Banana is my dad’s favorite flavor to get in a shake or malt so I thought why not try making Banana Ice Cream that I can share with … Continue reading

Do you remember those yummy ice cream pizzas you probably had as a child at Dairy Queen?  They came in multiple favors and were typically served at a party.  They were my FAVORITE!  And there was a time in my life that I believe they were discontinued, and I was admittedly bummed to never have one again.  However, I was able to find a way to recreate them as copycat versions of the original. I have 3 recipes to share with you today for Copycat Treatzza Pizzas…I call them Ice Cream Pizza. M&M Ice Cream Pizza Heath Bar Ice Cream Pizza Peanut Butter Ice Cream Pizza   Let’s start by walking through the M&M Ice Cream Pizza.  You start with an Oreo crust, top it with vanilla ice cream, drizzle with hot fudge, and add M&M candies to finish it off.  This is a classic ice cream dessert that’s incredibly … Continue reading

It doesn’t matter what time of year it is…ice cream is always an acceptable dessert.  Granted, I do tend to enjoy it more frequently during the summer months but every now and then a bowl of ice cream (better yet, homemade ice cream) satisfies my craving during the colder months of the year.  I like to make homemade ice cream.  Sure, store-bought ice cream is wonderful and super convenient but homemade ice cream tastes a bit like soft serve and is creamer in my opinion.  I have 3 recipes to share with you today for homemade ice cream: Birthday Cake Blueberry Butterfinger   The Birthday Cake Ice Cream is BY FAR my favorite ice cream I have ever made.  It tastes like cake batter…the pre-cooked batter you scrape out of the bowl and lick any excess off the spoon…that cake batter.  It’s sweet, creamy and is packed full of sprinkles.  It’s amazing. The recipe can be found … Continue reading

The Minnesota State Fair is in full swing.  Do you plan on going?  I know a lot of people that plan on attending the fair and a lot of people that don’t, for various reasons.  I sure love the fair and missed not being able to attend last year.  Unfortunately, this year, it’s also not in the cards for me.  However, that doesn’t mean I can’t enjoy some delicious fair food at home, and you can do the same! First off, I want to share with you a link to a blog I wrote last year.  The blog is called Your Favorite MN State Fair Food…at Home, because that’s what the blog is about – creating and enjoying all the classic state fair foods in the comfort of your own home.  I wrote this blog because the fair was cancelled last year and wanted to give everyone the option of … Continue reading

I consider myself to be a cookie connoisseur… or a cookie lover of sorts… so I will never turn down the option to sample a new cookie or try a new cookie recipe.  One of my favorite desserts is a warm cookie a la mode.  I could easily skip dinner and go right to dessert if I know this is on my menu, so I thought I would try my hand at making a homemade version.  Something I didn’t need to be at a restaurant to enjoy.  The result is a Cast Iron Chocolate Chip Skillet Cookie. The recipe can be found here. The cookie is hot right out of the oven with perfectly melted chocolate chips and wonderful ooey-gooeyness in every bite.  It’s big enough to share but you might not want to 😊 Start by preheating the oven to 350 degrees F. Add the butter to a saucepan.  … Continue reading

Sunday, July 19, 2020 is National Ice Cream day, and what better way to celebrate than with some homemade ice cream! There really is no better time to enjoy ice cream than a hot summer day!  You can obviously eat ice cream year-round but it’s such a cool and refreshing treat during the warm months.  With so many flavors to choose from, you’ll be sure to find your favorite.  I wanted to do something different for National Ice Cream day so I’m celebrating by making homemade ice cream. I have 5 flavors to share with you today; 3 require an ice cream maker and 2 require a high-speed blender, so you don’t necessarily need all the fancy equipment to make homemade ice cream.  It can be super simple and require few ingredients or it can be a more complex recipe with a variety of ingredients.  Basically, you can put as … Continue reading

Can you believe the 4th of July is this weekend?  I looked at my calendar and thought, that can’t be right.  What happened to the month of June?  I barely feel prepared!  But…. come Saturday, I will be ready. I’m putting others in charge of the food and am going to focus on desserts.  I know we’ll be spending as much time outside as possible, soaking up the sun, and social distancing with family and friends.  I want to make a variety of sweets with something for everyone.  I also want something that’s refreshing because it’s going to be HOT! The first dessert I’m going to make is an Ice Cream Sandwich Cookie.  It’s yummy vanilla ice cream sandwiched between 2 homemade cookies with yes, red, white, and blue, M&M’s for a 4th of July theme.  These are going to be the perfect way too cool off! The recipe can … Continue reading
