You’re in for a treat with my recipe for Mexican Street Corn Soup!  It has all the flavors of Mexican Street Corn but in soup form.  It’s a bit sweet and savory with a slight heat kick.  It’s hard to explain the explosion of flavors but if you’ve had it, you know exactly what I’m talking about.  If you haven’t, I highly recommend trying it.  It’s popular as corn on the cob, a cold salad, or dip. The very first thing I recommend doing is prepare ALL ingredients.  You want to be ready to assemble the soup and not slow down to chop veggies while it cooks so do the prep work first.  Chop the onion, celery, cilantro, and pepper.  Mince the garlic.  Wash, peel, and chop the potatoes.  Crumble the cotija cheese.  Even measure out your spices.  I like to place each in its own bowl so I can dump into contents into the pot … Continue reading

The Minnesota State Fair is in full swing.  Do you plan on going?  I know a lot of people that plan on attending the fair and a lot of people that don’t, for various reasons.  I sure love the fair and missed not being able to attend last year.  Unfortunately, this year, it’s also not in the cards for me.  However, that doesn’t mean I can’t enjoy some delicious fair food at home, and you can do the same! Can you believe Thanksgiving is almost here?  It’s been an interesting year (to say the least), so I’m looking forward to the holidays.  Although, the holidays might look a little different this year.  We still plan on seeing our immediate families for a nice Thanksgiving meal but will keep our gathering to 4-6 people.  We will miss traveling, seeing extended family, participating in some Black Friday shopping, and more this Thanksgiving, but will savor the time we do have with the few we choose to celebrate with…socially distanced with some delicious food 🙂 We are going to start our day with a nice fall-themed charcuterie board.  You need something to snack on while you cook, right?  If you’ve never made a charcuterie board before, you are in for a treat.  They are very simple to make, can include as many or as few ingredients as you choose, and make a … Continue reading

One of my favorite Thanksgiving traditions from my childhood was getting up early to help my mom prepare all the food.  We’d spend hours in the kitchen chopping vegetables, assembling casseroles, prepping the turkey (one in the oven and one on the grill), and baking pies.  We would clean up and get ready for the day while everything was baking in the oven, then we’d wait for company to arrive.  It was the best! This year, I’m thinking of changing the plan.  Why not do something a little simpler and less time consuming so we can enjoy each other’s company and spend the day with family?  The holidays are busy enough without spending hours in the kitchen, so I want to create a menu that is delicious but also fairly quick to put together.  At least that’s what I want my thought process to be going into the holiday season!  … Continue reading

Time to break out our favorite summer recipes and begin shopping for Memorial Day weekend groceries for the unofficial beginning of summer. Most likely the weather won’t feel like summer but we won’t care because we will have some great food to enjoy. And there must be guacamole, right? One meal of the weekend will be a slow roasted beef brisket, simple to prepare and provides a great atmosphere to relax with some beer and wine while it’s roasting. To roast it slow and low heat you want to order an untrimmed whole beef brisket from our meat counter, trimming the fat would cause you to lose the moist and tender texture of the beef.
