As colder weather sets in you are probably looking for something warm and filling to satisfy your cravings.  It is apple season (so move over pumpkin spice) and I think apple is one of the best flavors of the season because it pairs well with many dishes.  There are so many varieties of apples you are sure to find one that is your favorite and tastes great on a salad, or in a sandwich, or perhaps baked into a dessert. We are in the midst of apple season in MN has some of the best orchards around!  Prime apple picking is mid-to-late August through late October and makes for a wonderful family tradition!  Our family went to a local apple orchard recently and it was a blast.  We enjoyed some delicious apple treats, took a nice walk through the orchards, picked out a pumpkin to bring home, and just had an all-around good day. Most people have a favorite kind of apple but with so many varieties to choose from, I think it’s hard to pick.  And different kinds work for different recipes, so you have the option to sample different flavors while you cook and try out new recipes. The Minnesota State Fair is in full swing.  Do you plan on going?  I know a lot of people that plan on attending the fair and a lot of people that don’t, for various reasons.  I sure love the fair and missed not being able to attend last year.  Unfortunately, this year, it’s also not in the cards for me.  However, that doesn’t mean I can’t enjoy some delicious fair food at home, and you can do the same! Apple Cider Chicken & Apples is the ultimate fall dish!  Think juicy chicken, tender apple slices, the crisp taste of apple cider……my mouth is watering just thinking about it 🙂  Your whole kitchen will smell like fall with this dish.  It’s a healthy and simple fall meal. The recipe can be found here. Start by heating a large skillet over medium-high heat.  Add the olive oil and onions and cook until soft and translucent. Then add the chicken, season with salt and pepper, and cook until the chicken is about 80% done.  You only want to cook the chicken about 80% of the way because it will continue to cook while you prepare the rest of the dish.  Make sure to stir frequently so all sides of the chicken heat evenly. It’s the time of year for all the pumpkin flavored lattes, pancakes, cookies, pasta, etc. starts popping up.  If you can eat it, I’m sure someone has tried adding pumpkin flavoring to it!  It’s a craze that I’m more than happy to participate in 🙂 But, another fall favorite I don’t think gets enough credit is apple cider. I thought it would be fun to do a taste test of pumpkin vs apple cider with breakfast foods to see which the fan favorite is.  I made the same two items with both flavors. I love to eat apples year round but there is something special about eating apples in fall; the weather is getting cooler, colors are starting to change, and apple-picking season is upon us. They are crisp, sweet, refreshing, and a true symbol of fall. One of my favorite snacks to make in the fall is Apple Salsa. It’s something I had years ago at a local apple orchard and absolutely loved it! I knew I had to recreate it and spent hours trying to do so, and think I have the recipe perfected! The recipe can be found here. It’s the perfect combination of sweet and spicy. I think it’s more sweet than spicy but there is a subtle spicy undertone.
