Roasted Red Pepper Rigatoni is a sweet yet savory pasta dish with a lovely roasted red pepper sauce that is ready in about 20 minutes.  The sauce is creamy, the roasted red peppers add a bold flavor, and the noodles are perfectly cooked, al dente.  It’s easy to make and creates and explosion of flavor with every bite.

Start by bringing a large pot of water to a boil.  Make sure to salt the water!  Add the noodles and cook according to package instructions.  Stir once you’ve added the noodles and again every few minutes to ensure the noodles aren’t sticking together.  Once the noodles are cooked al dente, then are done.  Drain the noodles and return to the pot.

 

While the pasta is cooking, add butter to a large skillet and melt over medium heat.  Add the shallots and cook until translucent, about 2-3 minutes.  Then, add the minced garlic and cook for another minute.  This is the smell that really gets me 🙂 I love the smell of sautéed garlic wafting through the air.

Add the half & half and stir to combine.  Next, add the parmesan cheese and cream cheese.  I recommend cubing the cream cheese or slicing it very thin.  Stir to combine and continue to cook for about 2-3 minutes or until the cream cheese melts.  Having the cream cheese in smaller pieces vs block form will help it melt faster.

Add the roasted red peppers and stir to combine.  I prefer to use store-bought roasted red peppers for the convenience factor.  You can roast your own at home if you have the time and want to put in the effort.  Cook for another 2-3 minutes or until the peppers have warmed through.

Pour the sauce into a blender or food processor – be careful as the mixture is HOT!  Puree until creamy.  It’s OK if there are a few small pieces of red pepper in the sauce.  It will add nice texture and not affect the sauce or flavor.

Pour the sauce over the cooked noodles and toss to coat.  Season with salt and pepper, to taste.

Serve warm with fresh chopped basil and extra grated/shredded parmesan cheese on top.  Yummy!

I think this is a recipe the whole family will enjoy!  You could add some baked or grilled sliced chicken on top or even serve it with a side salad to really complete the meal.
