Taquitos are a fun hand-held treat that are crunchy and delicious.  You can customize the filling and change up the flavors to create different versions of the same dish and cook them in different ways.  They can be deep fried, baked in an oven or cooked in an air fryer.  I bet you could even use an Instant Pot, but I haven’t figured that recipe out yet 🙂

I’ve use Taquitos as both an appetizer and dinner.  They work well as an appetizer if you are hosting a party and want finger foods or if you plan to bring them to a potluck.  They are a quick grab-and-go item as you typically don’t need a plate or silverware.  Dinner is also an option if you want the Taquitos to be the main event.

I think you can convert anything into Buffalo Chicken so that is the recipe I want to share with you today – Oven Baked Buffalo Chicken Taquitos.

Start by preheating the oven to 425 degrees F and lining a baking sheet with parchment paper.

Make sure you cream cheese is softened to room temperature before you start preparing the filling.  It will be much easier to work with and incorporate into the filling.  I also prefer to use store-bought shredded chicken or rotisserie chicken.  Basically, I buy pre-cooked meat so some of the work is already done.  You can, however, cook 2 boneless skinless chicken breasts and cube or shred them to use, if you prefer.

Add the cream cheese, buffalo sauce, shredded chicken, and cheddar cheese to a large mixing bowl and mix until well combined.

Place 12 tortillas on the counter.  I prefer to use 6-inch sized tortillas because they are easier to work with.  I also lay out my tortillas so I can have a semi-assembly line.  I’d rather add the filling to each, then roll all the Taquitos as once, versus doing it one at a time.  Up to you what you prefer!

Add about ¼ cup of the mixture onto each tortilla, in the center.  Use the back of a spoon or a spatula to spread the mixture into a thin line along the middle of each tortilla.

Roll each tortilla and place seam side down on the baking sheet.  Lightly spray the tops with cooking spray.  This will help them get a nice golden-brown crust.

Bake for 15-17 minutes or until the tops are golden brown and the edges become crispy.

Serve warm, right out of the oven, with a side of Ranch or Blue Cheese dressing.  You can also drizzle the dressing over the top or set out some extra buffalo sauce for dipping for those that like a little extra heat.  Enjoy!
