Chicken Souvlaki is a classic Greek dish consisting of marinated grilled meat that is served with vegetables, creamy Tzatziki sauce, and pita bread.  It is a low carb, low in fat and very fresh.  So, for a very good reason, it’s a popular street food in Greece!

Souvlaki means “meat on a skewer”.  Pork is the most common type of meat used but chicken, beef, and lamb are other options.  The recipe I am going to share with you today uses chicken.  It’s packed with flavor and will bring a taste of Greece to your kitchen!

This is a 3-part recipe.  You must prepare the chicken souvlaki (aka skewers), the yogurt sauce (tzatziki), and tomato cucumber salad.  Each has a vibrant, fresh taste.  You will feel satisfied without feeling full after this meal.  Let’s start with the chicken.

Combine the lemon juice, olive oil, oregano, salt, pepper, and garlic in a large bowl.  Mix well.

Slice the chicken and add to the sauce.  Mix well to coat.  Then, cover and refrigerate for at least 1 hour.

While the chicken marinades, make the yogurt sauce.  Combine the Greek yogurt, cucumber, dill, salt, and pepper in a small bowl.  Mix well.  Then, cover and place in the fridge until ready to use.

Next, make the tomato cucumber salad.  Combine the lemon juice, olive oil, salt, and pepper in a large bowl.  Mix well.  Add the tomato, cucumber, and parsley, and stir to coat.  Then, cover and place in the fridge until ready to use.

Don’t make the salad too far ahead of time or it will get pretty juicy and soggy from the tomatoes!  If you are going to marinate the chicken longer than 1 hour, hold off on this part until closer to the time you are ready to cook the chicken.

Once the is finish marinating, thread it onto small skewers.  You should have enough for 6-8 skewers, depending on how small you sliced the chicken.

Heat a grill pan over medium heat.  Add the chicken skewers and grill on each side for about 5 minutes or until cooked through (rotating to cook each side) and an internal temperature of 165 degrees F is reached.

If you are having trouble getting every piece of chicken to heat through, you can transfer the skewers to an oven safe baking dish and finish cooking the chicken in a 350-degree F oven for about 10-15 minutes.

Once the chicken has finish cooking, you are ready to assemble your platter.

Place the chicken skewers on a large serving platter and surround them with the tomato cucumber salad and a dish of the yogurt sauce.  You can also add naan or pita bread, hummus, and olives to the platter.  Squeeze a little lemon over the top or add lemon wedges to the platter for everyone to add their own lemon.  It adds a great citrus flavor to the dish.

I like to serve the platter and assemble my own meal from the center of the table.  I’ll eat the chicken skewers with the yogurt sauce, create a little sandwich with the pita bread, hummus, and chicken, enjoy the tomato cucumber salad, etc.  You can play around with the different flavors and items available for a tasty meal.  Enjoy!
