Greek Chicken Wings with Lemon & Feta
Greek Chicken Wings with Lemon & Feta are the perfect combination for a light weeknight meal. These crispy chicken wings have a wonderful lemony flavor and are inspired by Greek/Mediterranean cuisine. They do need to be marinated so plan for timing, but you won’t regret your decision. It’s a delicious recipe that can be enjoyed as an entrée, appetizer, or side dish. The recipe can be found here. Start by marinating the wings. Whisk together the lemon zest, lemon juice, crushed garlic, olive oil, salt, pepper, and oregano in a large bowl. Add the wings to a large Ziplock bag and pour the sauce over the top. Mediterranean Brown Rice Bowl
If you love salad, grains, or any type of “bowl” style meal, you are going to love these Mediterranean Brown Rice Bowls! Its rice topped with plenty of veggies and a lovely lemon-olive oil style dressing. It’s easy to make, healthy, has limited cooking requirements (only cook the rice) and tastes great…that checks off every box on my list. You can also customize the flavors within the salad and dressing. For example, if you don’t like roasted red peppers, use fresh bell peppers, or substitute edamame for the cucumber…you get the idea. Farro Salads
Farro is something I was recently introduced to and it’s the star of these recipes. It’s a grain that makes great salads when used as the base or when added to leafy greens. It’s hearty, has a slightly nutty taste, holds up well with dressing, and makes a great meal. Mediterranean Turkey Bowls with Lemon Rice are my new favorite “bowls” to eat and quite honestly, I don’t think I’ll ever make regular rice again – lemon rice is where it’s at! These bowls are FULL of flavor. You have a tomato salad that is incredibly fresh, a Tzatziki sauce that is creamy and tangy, ground turkey that is perfectly seasoned and tender, and fluffy rice that is infused with a wonderful citrus flavor. Pan Seared Mediterranean Salmon
Pan Seared Mediterranean Salmon is an easy meal that comes together (from prep-time to completion) in about 30 minutes – perfect for a weeknight meal! The salmon is pan seared, which gives you a big return on texture and flavor. The skin is crispy, and the center is tender and moist. Once you add the accompanying ingredients you have a burst of Mediterranean flavors. This meal doesn’t take a lot of effort to make but will taste like it came from a restaurant. Greek Chicken Lettuce Wraps with Tzatziki Sauce
Greek Chicken Lettuce Wraps with Tzatziki Sauce are super easy to make, healthy, and refreshing. They are packed with zesty chicken, cool cucumbers, crisp tomato and onion, and tangy tzatziki sauce. It’s a burst of Mediterranean flavor! For us, these are simple weeknight meal. However, they would make great lunches because you can meal prep ahead of time and they are pretty light vs. filling. I recommend using bib lettuce, butter lettuce, or romaine hearts. They bib and butter lettuce create these “cups” for the ingredients to sit in and the romaine lettuce wraps the ingredients together well without ripping. If a lettuce wrap isn’t your thing, swap out the lettuce for a tortilla. The recipe can be found here. Start by making the Tzatziki Sauce. Mediterranean Eating
Sometimes in the winter months we look for lighter dinner options to break away from the warm and hearty meals people typically eat when it’s so cold out. It makes us feel a little healthier and is a great way to get in those veggies 😊 We recently made a Mediterranean Grilled Chicken with Greek Dill Sauce and paired it with Mediterranean Yellow Rice as a side. It was incredible! The chicken was tender and juicy, and the rice was light and fluffy. But the secret to what makes this recipe so good is the seasoning – it makes the dish really savory. The chicken is prepared with allspice, nutmeg, and cardamon, and the yellow rice is prepared with turmeric and cumin, making both dishes a little sweet. Mediterranean Chicken Bowls
I’ve been a big fan of “bowls” lately. For example, instead of eating a stuffed bell pepper, I would eat the ingredients tossed together in a bowl. Or instead of having an egg roll, the ingredients would be in a bowl….you get the picture. My most recent bowl idea is for a Mediterranean Chicken Bowl. It has a lemon-dill rice, wonderfully seasoned Greek chicken, a fresh cucumber and tomato salad, and yummy tzatziki sauce to bring it all together.
