Start by caramelizing the onions.  Melt the butter in a large skillet over medium-low heat.  Add the onions and season with salt.  Cook, stirring occasionally, until the onions start to turn golden brown, about 40-45 minutes.

Add the thyme and wine.  Stir to combine and let the wine reduce for 1-2 minutes.

Now that the hard part is done you can prepare the sandwiches.  Spread mayonnaise on one side of each piece of bread.  Place 2 slices of bread on a skillet, mayonnaise side down.  Evenly divide the onions between each.  Season with black pepper and sprinkle thyme on top of each.  Arrange 2 slices of gruyere cheese on top of each slice of bread.  Place the remaining slices of bread on top, mayonnaise side up.

Heat the skillet over medium-low heat.  Let the sandwiches cook for 3-4 minutes then flip and cook for 3-4 minutes on the other side.  The bread should be golden brown and crispy.  If the cheese isn’t entirely melted, warm the sandwiches in the microwave for 20-30 seconds.
