Jalapeno Popper Chicken Casserole is a favorite and easy to-to dinner when we are looking for something hearty and delicious.  It includes tender, juice chicken that is coated in a creamy mixture and topped with spicy jalapenos, shredded cheese, and crisp bacon.  This is a great recipe for lunch or dinner.

Start by cooking the bacon according to package instructions.  If you are using rotisserie chicken (which I highly recommend), remove the chicken from the bones and shred.  If you are using boneless skinless chicken breasts (which also work just fine), cook and cube or shred.  You want the meat to be pre-cooked before assembling the dish.

Preheat the oven to 375 degrees F.

Spread the chicken in the bottom of a 9×13 baking dish.  Season with garlic powder, paprika, and pepper (optional).

Whisk together the heavy cream, chicken stock, and cream cheese.  Spread in an even layer over the chicken.

Remove the tops of the jalapenos and slice in half (lengthwise).  Remove any seeds then slice into strips.  Lay the strips on top of the cream cheese mixture in an even layer.

Alternately, you can chop the jalapenos into small pieces and sprinkle them over the top or use a can of diced green chilies instead.  Jalapenos can be too spicy for some, and you might prefer the slightly milder spice of green chilies.  I like the crunch and taste of the jalapenos but understand they aren’t for everyone!

Sprinkle the cheddar cheese over the top in an even layer.

Bake for 20 minutes or until the cheese is melted and the cream cheese mixture and chicken are warmed through.  Remove from the oven and sprinkle the bacon over the top.  Then, bake for an additional 5 minutes.

Alternately, you can skip the bacon if it’s not your thing, and sprinkle breadcrumbs over the top to still get that crunch.

Slice and serve immediately while still hot.  Enjoy!
