Brunch is a widely popular weekend activity. Who doesn’t love meeting up with friends and family to enjoy some wonderful breakfast food and maybe a cocktail or 2? Gingerbread Scones with Cream Cheese Glaze
I recently felt the need to get out my Mini Scone Pan and try my hand at a festive breakfast of Gingerbread Scones with Cream Cheese Glaze. The result was super yummy! They taste similar to a gingerbread cookie; packed with cinnamon, ginger, and clove flavors, but make a tasty breakfast or treat. I think these are slightly more moist than traditional scones and have a nice texture. They pair well with some scrambled eggs and bacon or could be added to your brunch menu. I find vegetable shortening works best when removing the scones after baking. Scrumptious Scones
Scones are a new favorite baked good of mine. When I was younger, I thought they were hard and dry, and not very tasty, but as I’ve gotten older, I’ve learned to appreciate the texture and flavor. They are sweet, dense, dry, and crumbly, yet oh so good! They pair well with a cup of tea or coffee in the morning for breakfast. I was recently gifted a Mini Scone Pan, and this is the only way I will make scones. Sure, you can prepare the dough, roll it out, cut it into triangles, and bake it but the pan reduces many of the required steps and is so easy to use. All Things Pumpkin Spice!
It’s my favorite time of year! The weather is starting to cool down, the leaves are starting to change, and you can find pumpkin spice at just about any store. That’s what I’m talking about when I say my favorite time of year…. all things pumpkin spice. I love the flavor, but I also love that it’s available for a limited time, so it’s something I look forward to enjoying. I like to create a few new recipes each year that are pumpkin spice themed. Most are breakfast or dessert themed but that’s OK with me! Pumpkin spice is a combination of nutmeg, cinnamon, allspice, and ginger. It’s sweet, spicy, warm, and cozy. Yes…cozy. Broccoli & Bacon Quiche with Pepper Jack Cheese
Quiche makes a great meal for breakfast, lunch, or dinner. Quiches are easy to make in advance, refrigerates well, and reheats well (think yummy leftovers). My recipe for Broccoli & Bacon Quiche with Pepper Jack Cheese is certain to be a crowd favorite. It’s packed with tender broccoli, crispy, salty bacon, and spicy pepper jack cheese. The recipe can be found here. Start by letting the pie crust sit on the counter for 10-15 minutes to soften. I like to use refrigerated pie crust for the simplicity of it, but you can use homemade if you prefer. Once softened, unroll the pie crust and place in a 9-inch pie plate. Crimp the edges and set aside. Preheat the oven to 350 degrees F. Microwave the broccoli according to package instructions. Set aside to cool slightly.
