Fall is here!  AKA pumpkin spice season has begun.  It officially started a few weeks ago and I’m behind but don’t worry, I’ve been participating in the craze and am ready to share my recipes with you 🙂 My first recipe for the Chocolate Chip Pumpkin Blondies.  I call these “blondies”, but they have a more cakelike texture than a traditional blondie and are quite dense.  They are thick, chewy, soft, and moist, and hard to not eat all at once!  It’s the perfect combination of flavors with the pumpkin spice and chocolate chips. The recipe can be found here. Start by preheating the oven to 350 degrees F.  This part is optional, but you can line a 9×13 baking pan with parchment paper or you can skip this step.  The parchment paper helps lift the blondies out of the baking pan when cool and ready to slice but you can … Continue reading

I previously posted a blog called Individual Dessert Cups where I discuss easy, no bake desserts that are mini-sized and served in 2oz cups.  They are perfect for a holiday gathering (especially with Christmas and NYE coming up) or would make great treats for a birthday party, picnic, or even a bake sale.  I think they are JUST the right size to satisfy your sweet tooth yet are small enough that you can have more than one without feeling bad about overindulging. You can make them in a variety of flavors, complete with cookie base, creamy filling, and themed toppings.  Here are the recipes I’ll be walking you through today: Individual Cookies & Cream Dessert Cups Individual Strawberry Cheesecake Dessert Cups Individual Pumpkin Spice Dessert Cups   Let’s start with Individual Cookies & Cream Dessert Cups.  These are easy to make, delicious, and perfect for any Oreo lover! I like to create a few new recipes each year that are pumpkin spice themed.  Most are breakfast or dessert themed but that’s OK with me!  Pumpkin spice is a combination of nutmeg, cinnamon, allspice, and ginger.  It’s sweet, spicy, warm, and cozy.  Yes…cozy.  Think of the feeling you get when you drink a hot cup of apple cider on a cool day.  That’s a feeling I get when enjoying pumpkin spice food.  Even better, the pumpkin spice recipes I’m going to share with you today are hearty and filling, … Continue reading

The spice mix is generally a blend of ground cinnamon, nutmeg, ginger, cloves, and sometimes allspice.  I admittedly have all these spices in my cabinet but understand that not everyone else does, so I can make homemade pumpkin spice if needed, but something the store-bought version is easier 🙂 I also learned that cravings for … Continue reading
