Are you ready for the Kentucky Derby?  It’s usually held on the first Saturday in May, making it this upcoming Saturday, May 7, 2022.  A lot of people like to gather with friends and family to watch the races and enjoy some good food and drink.  I believe it’s known as “the greatest two minutes of sports” so why not spend all day in the kitchen for 2 minutes of cheering pleasure? 😊  Kidding…it’s a very fun horse race to watch! I will be preparing the following items to enjoy during our viewing pleasure, and you might notice a theme… Kentucky (where the derby is held) and whiskey/bourbon (sponsors of the event and heavily influenced in the south). Sheet pan meals are becoming more frequent at our house.  They are easy to assemble and quick to cleanup because all the cooking happens on…you guessed it…a sheet pan.  We have a 2-person household as well, so the sheet pan meals are often enough to have for 2 meals.  Depending on how busy we are during the week, this is either 2 dinners or 1 dinner and 1 lunch for us.  The combinations are endless as well!  We primarily make chicken with a vegetable on the side, but you could try turkey breasts, pork chops, etc. with any vegetable (or vegetables) of your choosing. My favorite recipe is for Sheet Pan Pretzel Encrusted Honey Mustard Chicken with Potatoes.  I think coating to the chicken adds a fun element to the dish because you had added texture and flavor instead of just plain chicken.  So, you get tender chicken in each bite with a little crunch.  The combination of … Continue reading

Pumpkin Spice Season is upon us.  It symbolizes the end of summer and the start of fall.  I know summer isn’t officially over, and to be honest, I’m not ready to say goodbye to warmer weather, but I am going to enjoy some delicious pumpkin treats either way 🙂 I have a few go-to recipes to share with you today.  All are themed around, you guessed it, pumpkin spice.  It’s hard to say which recipe is my favorite because they are all delicious in their own way.  Luckily, because it’s still technically summer and not fall, I have even more time to enjoy them all!
