St Patrick’s Day is fun day to celebrate, whether you are Irish or not.  You can typically find a parade or two around town, Irish themed food and drinks at your favorite restaurant or bar, and plenty of people wearing green!  It’s a festive day to celebrate and will unfortunately look a lot different this year due to COVID.  BUT…that doesn’t mean you can’t still celebrate at home! Who doesn’t love a good chocolate chip cookie?  I consider myself somewhat of a cookie connoisseur.  I will eat *almost* any flavor and typically have a container of cookies on the counter at the ready……and maybe a backup in the freezer.  I just love cookies! I kept seeing fun posts on social media of people eating tiny cookies as cereal and thought 1) what a neat idea, and 2) why haven’t I tried this?  I had to get in on the craze and participate in the new tiny cookie cereal trend.  The result is Mini Homemade Chocolate Chip Cereal that led me to one delicious meal! The MN State Fair is cancelled.  Those are words I never thought would come out of my mouth, but it’s 2020, and anything is possible this year 🙂  And what a year it’s been!  Luckily, some food trucks and vendors are still able to sell their highly demanded food at various locations around town.  If you have ventured out and waited in line for any of your favorites – good for you!  If you have not, there’s still time.  OR…. drum roll, please…. you can enjoy fair food in the comfort of your own home. Mini Pancake Muffins are my new favorite breakfast treat!  They are both a pancake and muffin, so you get the best of both worlds.  Plus, they are mini / bite-sized pieces so you can enjoy a variety or all of the same kind, and not feel bad about how much you eat 🙂 The first recipe is for Mini Pancake Muffins.  These are essentially plain pancakes in mini muffin form.  The recipe makes 24 mini muffins, so I kept 8 plain flavored, made 8 chocolate chip flavored, and made 8 blueberry flavored.  I do have a sweet tooth, so the chocolate chip were my favorite but all tasted amazing! Do you remember eating Pop-Tarts as a kid?  I do.  The wonderful little toaster pastries filled with sugar were one of my favorite breakfast items as a kid.  My tastes have changed a bit since then but every so often I do crave the fruity-sugary-goodness of a Pop-Tart. I decided to take a crack at making my own Homemade Pop-Tarts and they were delicious!  The crust was soft and flakey, the filling was packed with fruit and tasted like fresh jam, and the icing on top added the perfect amount of sweetness.  The nice thing about these is you can change up the flavor and use whatever fruit you like.  I chose blueberry and raspberry, but you could easily substitute strawberry, for example. Can you believe it?  Easter is right around the corner.  With all that is going on in the world these days I’m starting to lose track of time.  What is typically a day of family and friends gathering together will most likely be spend apart or perhaps in very small groups.  This puts quite the strain on menu planning when you won’t be hosting, won’t be attending the usual get-together, or are just trying to maintain social distance. Looking for a warm, healthy, and filling breakfast on a cold winter morning?  Look no further than Instant Pot Apple Cinnamon Oatmeal!  It cooks up perfectly in little to no time, only takes one pot, and will leave you feeling very cozy 🙂 It’s the perfect combination of warm and fluffy oatmeal, apples, and cinnamon.  Even better, the recipe is vegan, if you lead a vegan lifestyle. Start by chopping the apples into small pieces.  You essentially want to dice the apples.  A portion of the apples are going into the oatmeal to cook in the Instant Pot.  The rest of the apples will be used as topping. French Toast Bake combines all your favorite French Toast flavors in one baking dish that is easy to make and delicious to eat!  It’s a favorite make-ahead breakfast dish in my household.  You prep the French Toast Bake the night before, refrigerate overnight, and bake and enjoy in the morning.  Super easy with no fuss! Start by cutting the bread into 1-inch pieces.  I like to use either sourdough or French bread.  You can buy pre-sliced bread or whole bread.  Then place the bread pieces in a greased 9×13 pan.  You want the bread to be layered pretty evenly. In a mixing bowl, combine the eggs, milk, heavy cream, sugar, and vanilla.  Pour the mixture evenly over the bread, making sure to coat every piece. Homemade crepes are perfect for any occasion!  They are thin, tender, and easier to make than you think 🙂  You only need 6 ingredients to make these French-style homemade crepes.  No blender or special pan required (although it does help). The recipe can be found here. Start by combining the eggs, milk, flour, butter, vanilla, and salt in a mixing bowl.  Whisk together until smooth – you don’t want any chunks in the liquid!  Then let the batter rest for about 10 minutes. I have a crepe pan that I like to use but you don’t need a special pan to make crepes, you just need a flat-bottomed non-stick skillet.  You want to heat the pan over medium heat.
