BLT Naan Flatbread
If you are looking for a quick and easy weeknight meal, I have the perfect recipe – BLT Naan Flatbread. It’s all the flavors of your favorite BLT sandwich but in flatbread form. Think soft and chewy naan flatbread in lieu of toasted bread, crispy bacon, crunchy lettuce, juicy tomatoes, and melted cheese. The mayonnaise is whisked into a lovely sauce to drizzle over the top. And it’s all ready in about 20 minutes or less. The recipe can be found here. Start by preparing the bacon according to package instructions. I like to bake or fry my bacon (kind of depends on the time I have and how much cleanup I want to do). Remove the bacon to a paper towel lined plate to drain the excess grease and cool. Pimento BLT Sandwich
A Pimento BLT Sandwich is not your ordinary, run of the mill sandwich. It’s an elevated BLT because of the Pimento Cheese spread. If you aren’t familiar with Pimento Cheese, it’s a creamy, cheese, and tangy spread that is often referred to as the pâté of the South. It’s made with cream cheese, cheddar cheese, pimento peppers (which are sweet and mild), and mayonnaise. You can adjust the spicy by adding cayenne pepper and other seasonings. It’s best when homemade but you can usually find a jarred variety at your local grocery store. It goes well with crackers, vegetables, or spread on a sandwich, which is what we are doing today. BLTs are crisp, fresh, flavorful, and can be a delicious sandwich on their own but I like to add a little something extra to mine. Summer Salads
Summer is fast approaching and one thing I look forward to eating more of is salads. There is something about a big bowl of leafy greens with all the fixings that screams summer. It’s a healthy meal and is light and refreshing on a hot day. You also don’t often feel like you overate with a salad, and you can customize the ingredients to match your tastes. I want to share 4 of my favorite salad recipes with you: BLT Chicken Chopped Salad Grilled Chicken Arugula Salad with Strawberries & Feta Doritos Taco Salad Spinach Salad with Fruit & Maple Dressing All are simple to make, delicious, and large enough to feed a family of 4. Have you ever eaten something and thought “this is the only way I can ever eat this again”? That happened to me with this sandwich. Don’t get mad, but I have to admit I’m not really a fan of BLT’s. They are fine sandwiches but there isn’t much to them. It’s like they are missing something, and I think I found out exactly what’s been missing. You have to revamp the entire sandwich…. bread and fry the tomatoes, candy the bacon, make a delicious aioli, and eat it all on a pretzel bun.
