Black Bean Burgers are all the rage…in my life 😊 I know, I know…why would you want to eat a bland black bean burger when you could eat a juicy beef burger, you ask? Because they are quick and easy to make, packed with flavor, and a delicious (meatless) option.  I dare you to give them a try!  Plus, these are a great alternative to the frozen kind and will make you never want to eat a frozen burger again.   The recipe can be found here. One thing I’ve always been curious to try is a Juicy Lucy. I’ve never had the opportunity because I don’t eat red meat so I decided to create my own version using ground chicken. It took some tweaking to get the texture and size of the patty right but the result was yummy! The recipe can be found here. I didn’t want to use plain ground chicken without any seasoning because the burger wouldn’t have much flavor then. I followed the seasoning recipe from the Buffalo Chicken Penne recipe. I use this seasoning mix all the time at home. It’s great on a grilled chicken breast or veggies because it adds a salty flavor with a bit of spice, but now I’m getting off topic! It’s a busy time of year with summer coming to an end, school starting, preparing for fall and all the delicious food that comes with it (more on that later) but we were able to squeeze in one more weekend at the cabin!  We opted for a fairly simple menu because the weather was perfect and we wanted to make the most of the holiday weekend by spending as much time outside as possible. Let’s be honest, no one is up early at the lake, but when we do get up we are ready for some Bloody Mary’s and breakfast.  Our favorite is Tito’s Vodka with equal parts Tomato Juice and Clamato plus all the fixings!  We used Ellsworth, WI Cheese Curds, pickles, and summer sausage for our skewers.  Refreshing and a great way to start the day! For many of us Memorial Day marks the beginning of the “going to the lake” season with friends and family, this means lots of potluck dinners and picnics with food for a crowd. Burgers are often on these summer menus so we decided we should work on making the burger a little bolder with some spices, condiments and always with cheese! One of our favorite condiments is Sriracha so what better to have in and on top of a burger. The Sriracha Burger is full-flavored and fabulous. One of our favorite dishes is Guacamole so we thought it appropriate to combine with a burger for an all-star meal – the Guacamole Burger.   Well, for the most part. The minute we completed this Bacon Jam we began to imagine all of the food we could pair with this sweet and savory condiment! First things first though we better show how we made the jam. Here is the recipe that yields approximately 16 ounces so you have plenty of Bacon Jam to experiment with. Very simple to make on the stovetop, so no need to whip out the slow-cooker. Our recipe calls for using our own Festival bacon, delightfully flavorful bacon. Start by cutting the bacon into one-inch pieces and toss into the fry pan to brown. When bacon is browned, drain all but approximately 1/4 of the bacon grease and add the chopped yellow onion, continue to cook until the onion is slightly translucent.
