Salted Caramel & Chocolate Pretzel Bars are an amazing treat that is the perfect combination of sweet and salty!  The recipe is very basic and simple to make, any only requires 4 ingredients.  These no bake bars are perfect for any occasion! The recipe can be found here. Start by lining a baking sheet with parchment paper.  Add ¾ bag of chocolate chips to a microwave safe bowl.  Make sure to use good quality chocolate!  You don’t want to skimp on the chocolate in this recipe because it’s one of few ingredients and it’s a main ingredient.  Heat the chocolate in 30 second intervals, stirring in between, until completely melted and smooth.  Pour onto the parchment paper and spread in an even layer.  You can use a spoon or offset spatula to do this.  You want the chocolate to almost reach the edges of the pan. Cheesecake is one of my favorite desserts.  It comes in a variety of flavors, can be fruity or sweet, and is usually a crowd pleaser.  Mini cheesecakes are fun for a party or holiday because you can make a few different varieties, or perhaps make one plain batch but let your guests add their own toppings and have a simple yet delicious dessert. One of the recipes I want to share with you today is for Mini Salted Caramel Cheesecakes.  If you like cheesecake and caramel, these are for you!  The crust is a homemade graham cracker crust.  The cheesecake has a creamy texture, sweet taste that might be considered a little rich to some, with a slight tanginess, which comes from the cream cheese.  The mini cheesecakes are then doused in a generous amount of caramel sauce and sprinkled with salt.  SO GOOD! We are in the midst of apple season in MN has some of the best orchards around!  Prime apple picking is mid-to-late August through late October and makes for a wonderful family tradition!  Our family went to a local apple orchard recently and it was a blast.  We enjoyed some delicious apple treats, took a nice walk through the orchards, picked out a pumpkin to bring home, and just had an all-around good day. Most people have a favorite kind of apple but with so many varieties to choose from, I think it’s hard to pick.  And different kinds work for different recipes, so you have the option to sample different flavors while you cook and try out new recipes. It’s that time of year…. fall…. or pumpkin spice season, as some like to call it.  I did a little research on the fall phenomenon that is pumpkin spice and was quite intrigued by my findings.  Did you know that pumpkin spice earned its name because it was originally used in cakes and pies that contained pumpkin?  I didn’t but McCormick (the seasoning brand) started marketing the spice to save consumers the effort of having to make their own homemade version and could instead buy the spice at their local grocery store.  Pretty cool, huh? The spice mix is generally a blend of ground cinnamon, nutmeg, ginger, cloves, and sometimes allspice.  I admittedly have all these spices in my cabinet but understand that not everyone else does, so I can make homemade pumpkin spice if needed, but something the store-bought version is easier 🙂 I also learned that cravings for … Continue reading

Caramel Apples are a classic fall treat.  These Gourmet Caramel Apples are even better and will satisfy any sweet tooth! You can make these caramel apples at home in a few easy steps.  Start with tart green apples (or any apple of your choosing), dip into melted caramel, cover with any topping of your choice, let set, and enjoy – treat yourself! My favorite toppings are mini chocolate chips, mini M&M’s, crumbled Oreo cookies, peanuts or mixed nuts, and chocolate almond bark.  You can use any candy or snack topping of your choice.  A fun topping to try would be potato chips – the perfect combination of sweet and salty.  Maybe next time I’ll give that a try! It’s a busy time of year with summer coming to an end, school starting, preparing for fall and all the delicious food that comes with it (more on that later) but we were able to squeeze in one more weekend at the cabin!  We opted for a fairly simple menu because the weather was perfect and we wanted to make the most of the holiday weekend by spending as much time outside as possible. Let’s be honest, no one is up early at the lake, but when we do get up we are ready for some Bloody Mary’s and breakfast.  Our favorite is Tito’s Vodka with equal parts Tomato Juice and Clamato plus all the fixings!  We used Ellsworth, WI Cheese Curds, pickles, and summer sausage for our skewers.  Refreshing and a great way to start the day!
