Appetizing Appetizers
This time of year is prime for family gatherings, holiday parties, potlucks at work, you name it!… and I want to help you kick of the holiday season with a few simple (yet tasty) appetizer recipes that are sure to get the party started. I like to create delicious appetizers that look like I spent hours in the kitchen or appear to be store-bought but in fact didn’t take much time or effort to make. You want the conversation to start flowing and to interact with your guests, really be part of the celebration vs. spending the entire event in the kitchen preparing the meal, and I have you covered. These recipes are quick, easy, and tasty. Here are the recipes: Citrus Herbed Olives Balsamic Roasted Tomatoes with Burrata Cheese Roasted Red Pepper with Burrata Cheese Citrus Herbed Olives take about 5 minutes to make (plus time to marinate) and are a wonderful … Continue reading

Mediterranean Turkey Bowls with Lemon Rice
Mediterranean Turkey Bowls with Lemon Rice are my new favorite “bowls” to eat and quite honestly, I don’t think I’ll ever make regular rice again – lemon rice is where it’s at! These bowls are FULL of flavor. You have a tomato salad that is incredibly fresh, a Tzatziki sauce that is creamy and tangy, ground turkey that is perfectly seasoned and tender, and fluffy rice that is infused with a wonderful citrus flavor. The recipe can be found here. I know this recipe looks really long and complicated but it’s actually quite easy! We’re going to break it down into 4 categories: Tzatziki Sauce Tomato Salad Lemon Rice Mediterranean Turkey Our first step is to prepare the Tzatziki Sauce. In a medium bowl, combine the Greek yogurt, lemon juice, olive oil, dill, garlic, and cucumber. Stir to combine then taste and season with salt and pepper as needed. Cover and refrigerate until ready to use. Our … Continue reading

Mediterranean Munchies
With the cold weather approaching, I thought it would be fun to make a Mediterranean based meal, and imagine I’m in warmer weather, perhaps sitting on a beach somewhere 🙂 I made Chicken Gyros with Tzatziki Sauce for the main course and served Mediterranean Layered Hummus on the side. Both are easy to make, flavorful, and healthy! Chicken Gyros with Tzatziki Sauce are filled with spiced chicken, fresh veggies, and a tangy homemade sauce, and are served on warm pita bread. The tangy homemade sauce is Tzatziki Sauce, which is a Greek yogurt-based sauce with cucumber and fresh herbs added. These gyros are incredibly tasty! Start by preheating the oven. While the oven preheats, prep the chicken. Place the chicken in a small baking dish and drizzle with olive oil. Use your hands to rub the olive oil over both sides of the chicken. Then sprinkle fresh minced garlic, paprika, … Continue reading

Naan Flatbreads
We have been obsessed with flatbreads lately, specifically Naan flatbreads. Naan is a leavened, oven-baked bread that is moist and tender. And makes amazing flatbreads 🙂 One reason we love to make flatbreads is they are quick and easy, can be customized to any flavor preference, and taste great. You simply buy a package of Naan bread, choose your toppings, bake, and enjoy. The possibilities are endless! I have a few of our favorite recipes to share with you. Buffalo Chicken Naan Flatbread If you or your family likes spicy food, you’ll love this pizza. It has the perfect amount of spice that is cut with celery chunks. You can obviously make this as light or as spicy as you want by adding more hot sauce. We usually make our own individual pizzas because Andrew likes his much spicier than I do. Then the never-ending debate of Blue Cheese vs Ranch dressing starts…. but you can serve with … Continue reading

Christmas Dinner
Christmas is my favorite holiday to host. I think it’s due to my love of Christmas lights and decorations, so our house is always over the top! Plus, there are so many festive serveware options available that you can change up your table display as often as you like. (New Christmas plates…hint hint, Andrew 😊) Sometimes I like to go all out with appetizers and the main course but there isn’t anything wrong with keeping it simple if you prefer. I truly enjoy cooking for others and putting on a big spread but also want to enjoy the holiday with family and friends. So, I decided to keep my menu simple this year. I’ll be serving a few appetizers with some of the drinks from my Christmas Cocktails blog post. The first appetizer I’m going to make is Ricotta and Prosciutto Crackers. This is a light appetizer because it’s not … Continue reading
