Loaded Baked Potato Skillet
Loaded Baked Potato Skillet is a bit of a copycat recipe. We had something similar at a local restaurant and knew we had to recreate it at home. It’s such a wonderful side dish or can be used as a full meal if you want to fill up on only potatoes, which is entirely what we did 😊 The skillet is quite literally loaded with tender potatoes that are topped with a cheese sauce, shredded cheese (because you can’t have enough cheese), crumbled bacon, sour cream, and chives. It’s a typical loaded potato but pre-chopped, cooked in a skillet, and large enough to share. I highly suggest you give it a try! The recipe can be found here. Baked Feta Mashed Potatoes
Baking with blocks of feta cheese recently became all the rage on TikTok. I admittedly tried the Baked Feta Pasta recipe from a TikTok post, and it was phenomenal! This blog, however, isn’t about pasta. It’s about mashed potatoes. Baked Feta Mashed Potatoes to be specific. They are just as easy and effortless to make as the baked pasta and have a wonderfully creamy texture with a hint of tang from the feta cheese. It’s the perfect recipe for a weeknight side dish (with leftovers to spare), to serve at a holiday dinner, or perhaps bring to a potluck. It’s a foolproof recipe I’m sure you’ll love! Homemade Gnocchi
Have you ever tasted gnocchi so good that it melts in your mouth? Light, pillowy morsels that are tender and airy make the best gnocchi. We recently had this experience at a restaurant near our house and wanted to recreate the meal. Ultimately, our goal was to recreate the perfect Homemade Gnocchi, which is in fact what we accomplished. For those of you that aren’t familiar with gnocchi, it’s more of a dumpling than pasta. Gnocchi is made from potatoes that have been riced and mixed with flour and eggs. They also have these little ridges (or cavities) that are very helpful at holding sauce. Potato Tacos with Jalapeno Cilantro Sauce
Potato Tacos with Jalapeno Cilantro Sauce are a delight! They are vegetarian as well as vegan, so they make the perfect meal for Meatless Monday (or any day of the week). Plus, they are delicious! And who doesn’t love tacos? The Jalapeno Cilantro Sauce is a wonderful condiment for these tacos. It add a citrusy, tangy, flavor to the tacos. You’ll have plenty of leftover sauce as well to enjoy later in the week on more tacos, rice, chicken, salad, etc. The recipe can be found here. Start by making the Jalapeno Cilantro Sauce. Add all ingredients to a food processor or blender and blend on high until smooth; jalapeno, cilantro, garlic cloves, lime juice, apple cider vinegar, avocado oil, vegan mayo, and salt. Haunted Hullabaloo
Halloween is fast approaching. For some, Halloween is a lifestyle and obsession, for others, it’s a day to be someone or something else. I personally love decorating the house, buying candy to pass out to trick-or-treaters, dressing up the dog…. but mostly, I love the food! I like to take a traditional dish and “dress it up” for Halloween. For example, a pepperoni pizza might have the pepperoni in the shape of a jack-o-lantern. You get the picture 🙂 This year, I have quite the spread. It’s going to be one big Halloween celebration at our house, starting with breakfast, and ending with dinner. Plank Grilled Salmon
I have a secret to share. Andrew and I both love fish but have never made it at home before. Can you believe it? Well, we were feeling ambitious last night and decided to try making grilled salmon. Turns out it was super simple to make! A friend recommended we use a grilling plank because it gives the fish great flavor so we bought Fire & Flavor Cedar Wood Grilling Planks. You can find these by the meat counter at Festival Foods. They are sold in a pack of 2 and you can use each one about 2-3 times before throwing away so you get a few meals out of them. They are perfect for cooking beef, pork, chicken, salmon, and other seafood so you aren’t limited to any one item. The tricky part is planning ahead.
