Philly Cheesesteak Pasta is a great one-pot weeknight meal the whole family will love!  It tastes just like a Philly Cheesesteak sandwich and if you aren’t familiar, it’s thin sliced beef with sautéed onions and peppers on a hoagie that’s smothered with cheese.  In this case, the bun is being replaced by noodles.  It’s cheesy, melty, and the perfect comfort food. The recipe can be found here. Start by preheating the oven to 400 degrees F and prepare your ingredients – slice the onion and bell pepper and mince the garlic. Hawaiian Sheet Pan Chicken is a quick an easy, yet super tasty, weeknight meal.  The entire meal is made with one sheet pan so cleanup will also be quick.  You do need a cutting board, mixing bowl, and knife, but that’s still less dishes than normal, right?  I think it took me 60 min TOPS to make this dish, including prep time, bake time, and cleanup. This dish is full of flavor!  The chicken is moist and juicy, the veggies are tender, the BBQ sauce adds a little tanginess, and the pineapple add a wonderfully fresh, citrus flavor.  My favorite way to serve this is over a bed of rice but mashed potatoes or a salad would be a good substitute. St Patrick’s Day is fun day to celebrate, whether you are Irish or not.  You can typically find a parade or two around town, Irish themed food and drinks at your favorite restaurant or bar, and plenty of people wearing green!  It’s a festive day to celebrate and will unfortunately look a lot different this year due to COVID.  BUT…that doesn’t mean you can’t still celebrate at home! We are going to celebrate by having breakfast for dinner.  You don’t tend to hear of too many Irish breakfast foods but we’re going to make it work!  The food doesn’t have to be Irish necessarily but can be themed to fit the event.  In this case, we’re going to make Shamrock Cinnamon Rolls and Shamrock Fried Eggs.  So instead of being traditional Irish food, we are shaping the food and adding some green elements to fit with the typical colors of … Continue reading

Stuffed Peppers are a favorite at my house.  There are so many possibilities for stuffed peppers so you can really cater the filling to meet any dietary need.  Our recent craving has been for Greek Orzo Stuffed Peppers.  They are quick to make, fairly simple to assemble, vegetarian / vegan, healthy, and tasty 🙂 You can make this dish more colorful by using a combination of green, orange, red, or yellow bell peppers.  I’m partial to red bell peppers for no particular reason so that is what I choose to use.  I typically serve these as a main dish, but they could easily be a side dish if served with other items. Lemon Orzo with Roasted Vegetables is not your typical pasta salad.  It’s packed with texture and flavor yet is very light and refreshing.  It works well as a side dish or as a standalone meal.  I think it’s best served warm but room temp or chilled is also fine, it’s all about your preference. The vegetables are delicious when roasted because they are slightly caramelized.  I like to use bell pepper, asparagus, cherry tomatoes, and red onion but you can substitute any veggies you like – eggplant, zucchini, squash, mushrooms, etc.  You can really make this your own by using the veggies you crave. You can also top this salad with pine nuts for a little crunch or some crumbled feta cheese.  If you choose to skip the cheese, this is a great vegan based dish. Most Minnesotans are familiar with kabobs because we love to grill when the weather is warm.    However, if you aren’t familiar with kabobs you are in for a treat!  Kabobs are basically cubes of meat, fish, vegetables, fruit, and other foods placed on a skewer and grilled to perfection.  And with the MN State Fair recently ending all I can think of is food on a stick so blogging about kabobs seemed like the perfect fit! I have 4 different kabobs to share with you today. Every time I shop at Festival Foods I have to checkout the Meat Department because they always have a large assortment of prepackaged meal options. You can find bratwurst, burger patties, marinated chicken, pork chops, and much more. One of my favorite things to buy is Crusted Chicken Breasts. They are available in a variety of flavors and are easy to make for dinner because all you have to do is bake them. I bought 2 different flavors during my last trip to the store, Parmesan Crusted Chicken and Tortilla with Cheese Crusted Chicken. I thought it would be fun to do a taste test to see which one we liked better. The first night we had the Parmesan Crusted Chicken Breast with a Caesar salad and corn bread (from the Festival Foods Bakery). To make the chicken I preheated the oven to 375 degrees.
