Gruyere & Onion Flatbread is a wonderful recipe for a quick weeknight meal.  It’s light and will leave you feeling satisfied without being overly full, and it has great flavor!  It’s a little salty but has this rich and nutty flavor from the gruyere cheese and a hint of tang from the red onion.  The Lavash flatbread makes the perfect pizza crust.  If you aren’t familiar with Lavash, it’s a flatbread that is low in sodium, low in cholesterol, and is very thin (less doughy).  I think Lavash is perfect because it is paper thin and get a nice, crispy bottom, so each bite is crunchy. Not too long ago, I hopped on the TikTok trend where you bake a block of feta cheese with cherry tomatoes and when done, toss it with cooked noodles for a light and refreshing pasta.  It was a HUGE hit in our house so I figured I would try it again but with a few changes.  The original recipe is for Baked Feta and Tomato Pasta but the recipe I’m going to share with you today is for Baked Feta and Vegetable Pasta. We don’t use our air fryer often but every now and again it’s fun to try a new recipe.  This time we tried an Air Fryer Blooming Onion.  A blooming onion is essentially a large onion that is sliced to resemble a flower, battered, deep fried, and served as an appetizer.  My recipe removes the deep-frying step and has you air fry it instead. The batter creates this lovely crust that is crispy, the onion is tender, and the dipping sauce adds a nice tang to each bite. The recipe can be found here. I recently acquired a spaetzle maker and thought I would play around with creating a fun and delicious recipe.  I bought the spaetzle maker without ever having spaetzle before but thought it looked like a neat kitchen tool to try and after researching recipes, thought it wouldn’t be too hard to make. Spaetzle is a type of pasta made with eggs and flour and it’s typically served as a side dish.  I wanted to make mine into more of a meal, but you could easily half the recipe or tweak some of the ingredients to enjoy it as a side dish.  It’s very popular in German cuisine so keep this in your back pocket when Oktoberfest comes around and you need a unique dish to celebrate with 😊 My recipe is for Bacon & Onion Spaetzle.  The spaetzle is homemade and perfectly tender.  When you pair it with onions, cheese, and bacon, it becomes quite the … Continue reading

Friday night is pizza night at our house.  With COVID, we’ve been cooking at home a lot more than ordering in or going out to eat so we’ve taken to preparing our own pizzas from scratch at home.  It’s been fun to play around with toppings and be creative with what we add to each pizza.  You can definitely stick with the traditional toppings if that’s what you prefer on pizza, but we like to branch out and make each pizza unique. Sheet Pan Roasted Gnocchi & Veggies is a great one-pan meal the whole family will love!  It’s full of toasted gnocchi (store bought but still delicious), roasted fresh veggies, herbs, and a dusting of Parmesan cheese.  It’s easy to throw together on a busy weeknight and is a meal that can be enjoyed year-round. The recipe can be found here. Start by preheating the oven to 425 degrees.  Line a baking sheet with parchment paper. Chop the bell peppers and onion.  You can use any color of bell pepper – it just makes the dish more colorful!  You don’t need to slice the tomatoes. Lemon Orzo with Roasted Vegetables is not your typical pasta salad.  It’s packed with texture and flavor yet is very light and refreshing.  It works well as a side dish or as a standalone meal.  I think it’s best served warm but room temp or chilled is also fine, it’s all about your preference. The vegetables are delicious when roasted because they are slightly caramelized.  I like to use bell pepper, asparagus, cherry tomatoes, and red onion but you can substitute any veggies you like – eggplant, zucchini, squash, mushrooms, etc.  You can really make this your own by using the veggies you crave.
