Cupid’s Cocktails & Confections

Valentine’s Day is a few short days away. Do you have plans or know how you’re going to celebrate? A lot of people have set traditions each year and like to go out to dinner or prepare a fun meal at home with their friends and/or loved ones. We prefer staying in and making a meal at home. We feel less rushed, it’s fun to cook together, and we can make something special to celebrate the holiday. Two things I like to focus on when creating new Valentine’s Day recipes is desserts and cocktails. Both will enhance your dinner and make the event more memorable and are required to complete the meal (in my opinion). Chocolate Peppermint Trifles

Chocolate Peppermint Trifles are a wonderful no bake dessert for the holidays! Think layers of cookie crumbs, chocolate pudding, whipped cream, and crushed candy canes…it’s delicious! It’s a simple recipe that takes about 15 minutes to make and then sets in the fridge until ready to serve. I like to serve mine in 4-8oz trifle containers, but you could divide the pudding between 8-4oz containers to stretch it further. The recipe can be found here. Start by adding the Oreos to the bowl of a food processor. Pulse into fine crumbs then divided between 4 8oz trifle dishes (or 8 4oz dishes) and use the back of a spoon to press into the bottom. If you don’t care for mint flavoring, you can use regular Oreos for the base. Add the milk, chocolate pudding, vanilla pudding, and peppermint extract to a large mixing bowl. Chocolate Peanut Butter Ice Cream Bars

Chocolate Peanut Butter Ice Cream Bars are one of my top 10 favorite desserts. They are essentially cream sandwiches you make on a rimmed baking sheet. A combination of chocolate and peanut butter makes up the flavors in the cookie with a hint of sea salt sprinkled on top. The filling is basic vanilla ice cream. However, you can use any ice cream flavor of your choosing. Chocolate ice cream would make the perfect chocolate extreme dessert. Salted Caramel ice cream would pair nicely with the chocolate/peanut butter cookies. You get the idea! Make this dessert your own. The recipe can be found here. Super Simple No Bake Pies

Any recipe that is “no bake” is pretty amazing. The recipes are typically simple to make and often don’t take a lot of time (just plan ahead so the pie has time to chill). My favorite “no bake” recipes are for dessert. You can make some delicious bars, pies, etc. without ever turning on your oven. Soft & Chewy Cookies – Part 1

I like to consider myself a cookie connoisseur. I have a few favorite flavors but will not pass up another variety when asked 🙂 When it comes to cookies, you can separate them into 2 categories – crispy and chewy. But that’s just my opinion! Sometimes I want a cookie that is thin and crisp and sometimes I want a cookie that is thick and chewy, just depends on the day! Individual Cheesecakes

Cheesecake is one of my favorite desserts. It comes in a variety of flavors, can be fruity or sweet, and is usually a crowd pleaser. Mini cheesecakes are fun for a party or holiday because you can make a few different varieties, or perhaps make one plain batch but let your guests add their own toppings and have a simple yet delicious dessert. One of the recipes I want to share with you today is for Mini Salted Caramel Cheesecakes. If you like cheesecake and caramel, these are for you! The crust is a homemade graham cracker crust. The cheesecake has a creamy texture, sweet taste that might be considered a little rich to some, with a slight tanginess, which comes from the cream cheese. National Ice Cream Day

Sunday, July 19, 2020 is National Ice Cream day, and what better way to celebrate than with some homemade ice cream! There really is no better time to enjoy ice cream than a hot summer day! You can obviously eat ice cream year-round but it’s such a cool and refreshing treat during the warm months. With so many flavors to choose from, you’ll be sure to find your favorite. I wanted to do something different for National Ice Cream day so I’m celebrating by making homemade ice cream. I have 5 flavors to share with you today; 3 require an ice cream maker and 2 require a high-speed blender, so you don’t necessarily need all the fancy equipment to make homemade ice cream. National S’mores Day

Today is National S’mores Day. A s’more traditionally consists of a roasted marshmallow on top of melted chocolate sandwiched between two graham crackers. It’s a very popular campfire treat loved by people of all ages! It’s ooey, gooey, toasty, deliciousness! What better way to honor this classic treat than by testing out a few recipes 🙂 First up is No Bake S’Mores. This recipe only requires 4 ingredients and is the perfect indulgence! The recipe can be found here. I find it easiest to line a bread pan with parchment paper or plastic wrap. Then place the graham crackers in a plastic bag and smash into fine crumbs. Melt the butter and add the graham cracker crumbs to the melted butter. Pour the mixture into the bread pan but make sure to reserve 1 Tbsp to sprinkle on top. Press down to make a flat layer.
