Creamy Cajun Chicken Pasta is my newest weeknight recipe that your family will love!  It’s a filling and delicious pasta that comes together in about 30 minutes.  It’s rich, creamy, a little spicy, and packed with wonderful ingredients.  I will admit…when I was originally working on this recipe it was going to be soup, not pasta, but plans changed, and soup just wasn’t in the cards that night.  I blame the noodles for absorbing so much of the liquid that would have been yummy soup, but the recipe still turned into something great, and we had a lovely pasta dinner.  One thing I love to do is play around with recipes so even though my original plan didn’t work out, I was able to recover and still serve dinner.  Has that ever happened to you? Air Fryer Toasted Ravioli is my newest weeknight creation.  It’s delicious as an appetizer or can be served as a meal, is crispy, crunchy, perfectly seasoned, and has plenty of melted cheese.  What’s not to love?  I personally like the Air Fryer version because it’s not deep fried and coated in oil but still has great flavor.  Pair it with your favorite marinara or alfredo sauce for dipping and you are ready to dig in! This is a recipe you will need to cook in batches.  My Air Fryer only held 4-5 ravioli at a time, so I ended up doing 3 cooking cycles.  If you have a larger Air Fryer, you might be able to fit more ravioli at a time, but you will want to plan for cook time.  The recipe isn’t hard to make or incredibly time consuming to prepare but you will have down time as the Air Fryer cooks each batch.  So, pour a glass of … Continue reading

Caprese Ravioli Salad is the pasta salad of summer…. or winter…. whenever you are looking for something light and refreshing.  It’s ready in about 20 minutes or less and is packed with fresh flavors of basil, tomatoes, mozzarella cheese, and balsamic glaze.  This recipe can be served as a side dish or main course.  If serving as the main course, add a garden salad or some fresh veggies and hummus on the side. The ravioli is coated in a wonderful oil and herb dressing.  You can use cherry or grape tomatoes.  I recommend cheese ravioli or perhaps cheese tortellini (if you can’t find ravioli).  Use fresh basil, it’s way better than dried basil.  And use mozzarella pearls or fresh mozzarella slices that are cut into smaller chunks.  The keyword here is FRESH!  You will really notice a difference in the taste and texture of the dish if your ingredients are fresh. Sun Dried Tomato & Scallop Pasta is an easy to make yet incredibly delicious weeknight meal.  It’s a recipe that sounds like you ordered if from a local restaurant when in fact you whipped it up in no time at home.  I think scallops pair well with a cream sauce and pasta so it’s the perfect combination.  The pasta is tender and coated in a lovely mozzarella, sun dried tomato sauce.  The scallops have a nice sear and good texture.  And there is good heat from the red pepper flakes. The best way to cook scallops is to sear them on the stovetop in a skillet with some oil or butter.  You want a golden crust on the top and bottom and the inside to have a soft texture.  You can use fresh or frozen scallops.  I tend to use frozen so I don’t have to worry about cooking them so soon after purchasing but you will have to ensure … Continue reading

Creamy Tomato Gnocchi with Burrata is the ultimate weeknight meal!  It’s quick and easy to make, uses simple yet fresh ingredients, and highlights some popular summer flavors.  Think fresh tomatoes and basil (possibly from your garden), creamy burrata, and soft gnocchi.  It’s a game changer! Bring a large pot of water to a boil and cook the gnocchi according to package instructions.  Reserve ½ cup of the pasta water and drain the rest of the water.  Set the gnocchi aside.  You can prepare homemade gnocchi if you prefer but store-bought works well for this recipe. Instant Pot Chicken & Vegetable Pad Thai is simple weeknight meal that is ready in no time!  It’s packed with tender chicken, lots of veggies, noodles, and a flavorful sauce.  Pad Thai sauce is a little salty, fairly nutty, and a little sweet in flavor.  I think it’s similar to peanut sauce, which tastes great on just about anything 😊 This is a one-pot meal your whole family will love! Start by doing all your prep work.  Slice the chicken, zucchini, bell pepper, etc.  I like to buy matchstick carrots because they are already the needed size.  I also prefer to julienne (cut super thin) my zucchini but if you have a spiralizer, that also works well.  Set all the ingredients aside until ready to use. Do you ever order ravioli at a restaurant and wonder why it doesn’t taste the same when you make it at home?  Or you think you need to make homemade ravioli for it to taste as good as at a restaurant?  Well…you don’t!  You just need to find a premade, store-bought ravioli that you like, and jazz it up!  My preference is to buy fresh.  This is what you can find in the refrigerator section, often by the lunch meats or deli items.  These “fresh” pastas usually have a shorter shelf life and only take a few minutes to boil.  You can also go the frozen ravioli route if you have a brand or flavor in mind.  These options make cooking ravioli SO MUCH EASIER at home because the bulk of the work is already done for you.  All you must do is add sauce and toppings and you have a wonderful meal! Instant Pot Bacon Gouda Mac & Cheese is a very simple yet delicious meal that is ready in no time!  The combination of ingredients is incredibly rich and flavorful.  The bacon is crispy, the onions are caramelized, the noodles are nice and tender (but not mushy), and the gouda adds a wonderful nutty and creamy taste and texture to the whole dish.  You cannot go wrong with this recipe! The recipe can be found here. Start by prepping your ingredients – chop the bacon, dice the onion, measure out your spices, and shred the cheddar and gouda.  Set all ingredients aside. Chicken Fajita Pasta is a yummy one-pot recipe you will be sure to enjoy!  It’s creamy and packed with peppers, onions, and tender chicken in each bite.  The main selling point for me on this recipe is that you cook the entire meal in one-pot which means less dishes and easier clean up. The recipe can be found here. Start by slicing the chicken, onion, and bell peppers, and mince the garlic. Heat oil in a large skillet or Dutch oven over medium-high heat.  You want the skillet to be large enough to cook all the ingredients so make sure you are using a large enough vessel.  Add the chicken and cook for 3-4 minutes.  Then, add ½ of the fajita seasoning and stir to coat.  Continue to cook for another 3-4 minutes or until the chicken is cooked through.  It will absorb the fajita flavor and be perfectly seasoned.  Remove the chicken from the pan and set … Continue reading

Not too long ago, I hopped on the TikTok trend where you bake a block of feta cheese with cherry tomatoes and when done, toss it with cooked noodles for a light and refreshing pasta.  It was a HUGE hit in our house so I figured I would try it again but with a few changes.  The original recipe is for Baked Feta and Tomato Pasta but the recipe I’m going to share with you today is for Baked Feta and Vegetable Pasta.
