Creamy Tomato Gnocchi with Burrata is the ultimate weeknight meal!  It’s quick and easy to make, uses simple yet fresh ingredients, and highlights some popular summer flavors.  Think fresh tomatoes and basil (possibly from your garden), creamy burrata, and soft gnocchi.  It’s a game changer! Bring a large pot of water to a boil and cook the gnocchi according to package instructions.  Reserve ½ cup of the pasta water and drain the rest of the water.  Set the gnocchi aside.  You can prepare homemade gnocchi if you prefer but store-bought works well for this recipe. Instant Pot Chicken & Vegetable Pad Thai is simple weeknight meal that is ready in no time!  It’s packed with tender chicken, lots of veggies, noodles, and a flavorful sauce.  Pad Thai sauce is a little salty, fairly nutty, and a little sweet in flavor.  I think it’s similar to peanut sauce, which tastes great on just about anything 😊 This is a one-pot meal your whole family will love! Do you ever order ravioli at a restaurant and wonder why it doesn’t taste the same when you make it at home?  Or you think you need to make homemade ravioli for it to taste as good as at a restaurant?  Well…you don’t!  You just need to find a premade, store-bought ravioli that you like, and jazz it up!  My preference is to buy fresh.  This is what you can find in the refrigerator section, often by the lunch meats or deli items.  These “fresh” pastas usually have a shorter shelf life and only take a few minutes to boil.  You can also go the frozen ravioli route if you have a brand or flavor in mind.  These options make cooking ravioli SO MUCH EASIER at home because the bulk of the work is already done for you.  All you must do is add sauce and toppings and you have a wonderful meal! Instant Pot Bacon Gouda Mac & Cheese is a very simple yet delicious meal that is ready in no time!  The combination of ingredients is incredibly rich and flavorful.  The bacon is crispy, the onions are caramelized, the noodles are nice and tender (but not mushy), and the gouda adds a wonderful nutty and creamy taste and texture to the whole dish.  You cannot go wrong with this recipe! Chicken Fajita Pasta is a yummy one-pot recipe you will be sure to enjoy!  It’s creamy and packed with peppers, onions, and tender chicken in each bite.  The main selling point for me on this recipe is that you cook the entire meal in one-pot which means less dishes and easier clean up. The recipe can be found here. Start by slicing the chicken, onion, and bell peppers, and mince the garlic. Not too long ago, I hopped on the TikTok trend where you bake a block of feta cheese with cherry tomatoes and when done, toss it with cooked noodles for a light and refreshing pasta.  It was a HUGE hit in our house so I figured I would try it again but with a few changes.  The original recipe is for Baked Feta and Tomato Pasta but the recipe I’m going to share with you today is for Baked Feta and Vegetable Pasta. Halloween is fast approaching – are you ready? We sure are. Halloween is a month-long celebration at our house. We decorate early, spend 31 days gorging on candy, watch every Halloween movie possible, and make some fun themed treats to enjoy. I want to share with you some of my new Halloween recipes and ideas for this year. Each is fairly customizable and will be sure to put your friends and family in a mood to celebrate. My first Halloween idea is for a Char-Spookery board. This is a traditional charcuterie board but with a spooky flair. To be called a charcuterie board, it must contain meat. It’s that time of year…. fall…. or pumpkin spice season, as some like to call it.  I did a little research on the fall phenomenon that is pumpkin spice and was quite intrigued by my findings.  Did you know that pumpkin spice earned its name because it was originally used in cakes and pies that contained pumpkin?  I didn’t but McCormick (the seasoning brand) started marketing the spice to save consumers the effort of having to make their own homemade version and could instead buy the spice at their local grocery store.  Pretty cool, huh? The spice mix is generally a blend of ground cinnamon, nutmeg, ginger, cloves, and sometimes allspice.  I admittedly have all these spices in my cabinet but understand that not everyone else does, so I can make homemade pumpkin spice if needed, but something the store-bought version is easier 🙂 I also learned that cravings for … Continue reading

Willkommen (or welcome) to Oktoberfest!  If you aren’t familiar, Oktoberfest is the world’s largest Volksfest…or beer festival and traveling funfair, for those of use that don’t speak German.  It’s held in Germany and runs about 2 weeks, typically from mid-Sept to the first Sunday in October.  You can find traditional German food such as sausages, oversized soft pretzels, mustard and curry ketchup, cabbage and radish salads, dumplings, spaetzle, and obviously, plenty of ice-cold beer!  More than 6 million people from around the world attend the event every year. Unfortunately, the Oktoberfest celebration in German is cancelled again this year, but that doesn’t mean you can’t still enjoy plenty of yummy food.  So, pull out the decorations, get your house in order, invite some friends and family over, and cook up some delicious German food!
