I recently saw a Tik Tok of someone making Chicken Parmesan Sliders and knew I had to try to recreate them myself.  Upon watching the (short) video again, I realized they were BUFFALO Chicken Parmesan Sliders, and I was all in.  Anytime buffalo chicken is involved I’m game.  It’s one of my favorite things to eat and I love sampling different variations. These sliders are essentially little Chicken Parm sandwiches with a bit of heat from the buffalo sauce.  They are incredibly easy to make and are packed with flavor. The recipe can be found here. I love all things Buffalo Chicken.  If you can “buffalo chicken” a recipe, I’ve probably done it, and if I haven’t, I want to know what I’m missing.  My new favorite recipe is for Buffalo Chicken Lasagna.  It’s loaded with buffalo wing sauce, tender rotisserie chicken, plenty of cheese, and soft noodles.  It’s got some heat but isn’t too spicy in my opinion.  If it is too spicy for you, cut the heat with some blue cheese or ranch dressing.  It’s an easy recipe to prepare and comes together, start to finish, in about 1 hour. Meatloaf is the epitome of comfort food.  And this time of year, we are all looking for something warm, hearty, and comforting to beat the cold temperatures.  What’s better than meatloaf?  Try Buffalo Chicken Meatloaf.  It has the traditional texture and shape of meatloaf but is made with ground chicken.  The hot sauce or buffalo sauce brings the heat, but it’s balanced by creamy blue cheese.  This is a dish that is perfect for a weeknight meal and makes great leftovers.  If you are buffalo sauce fan, I recommend you give it a try! If you haven’t checked out the Meat Counter at your local Festival Foods, I highly recommend it!  You can find plenty of standard meat options; beef, chicken, seafood, etc. …things you would expect to see.  BUT you will also find some specialty items you might not be familiar with.  My favorite items to buy are the encrusted chicken breasts.  They come in a variety of flavors; pecan, parmesan, buffalo, and tortilla are the most common.  If you are lucky, you might find a different flavor from time to time.  They are sold individually or pre-packaged as a pack of 2, depending on the store location. You can typically find some of each in our freezer for a quick and easy weeknight meal.  Most commonly, I will bake the chicken breasts and serve them with a side salad or slice the chicken to eat on top of a bed of lettuce.  You can play around with different flavor combinations … Continue reading

Buffalo Chicken Quesadillas are another way to enjoy a popular dish.  If I can find a way to eat buffalo chicken or find a way to make it into a new dish…. it’s going to happen.  And these quesadillas don’t disappoint!  They come together quickly, only take a few ingredients, and can be doubled or tripled if you need to feed a crowd. Start by shredding or cubing the chicken.  I like to use rotisserie chicken because it’s tender and flavorful (and precooked), but you can easily bake your own chicken if you prefer.  Add the chicken to a mixing bowl and pour in the buffalo wing sauce.  Toss to coat.  You should also sample some, for quality assurance 😊 Heat a large skillet over medium heat.  Add one tortilla. Sliders are one of my go-to ideas when it comes to meal prep.  I want something easy to make that will also last a few days.  Let me tell you, they are delicious!  If you’re unfamiliar with “sliders” they are basically small sandwiches that are served warm with various meats, cheeses, condiments and toppings (think finger sandwich size).  You can mix and match the sandwich ingredients to create different flavors and serve as an appetizer or entrée.  I like to make sliders for lunches.  Two of the mini sandwiches are the perfect sized lunch plus they hold up very well over the course of a few days and are perfectly tasty when reheated.
