Cupid’s Cocktails & Confections
Valentine’s Day is a few short days away. Do you have plans or know how you’re going to celebrate? A lot of people have set traditions each year and like to go out to dinner or prepare a fun meal at home with their friends and/or loved ones. We prefer staying in and making a meal at home. We feel less rushed, it’s fun to cook together, and we can make something special to celebrate the holiday. Two things I like to focus on when creating new Valentine’s Day recipes is desserts and cocktails. Both will enhance your dinner and make the event more memorable and are required to complete the meal (in my opinion). So, let’s walk through my new recipes and hopefully something will catch your eye to prepare for Valentine’s (or Galantine’s) Day! I’m going to start with the cocktails because 1) they are easy to make, 2) they are delicious, and 3) you need … Continue reading

Individual Dessert Cup 2.0
I previously posted a blog called Individual Dessert Cups where I discuss easy, no bake desserts that are mini-sized and served in 2oz cups. They are perfect for a holiday gathering (especially with Christmas and NYE coming up) or would make great treats for a birthday party, picnic, or even a bake sale. I think they are JUST the right size to satisfy your sweet tooth yet are small enough that you can have more than one without feeling bad about overindulging. You can make them in a variety of flavors, complete with cookie base, creamy filling, and themed toppings. Here are the recipes I’ll be walking you through today: Individual Cookies & Cream Dessert Cups Individual Strawberry Cheesecake Dessert Cups Individual Pumpkin Spice Dessert Cups Let’s start with Individual Cookies & Cream Dessert Cups. These are easy to make, delicious, and perfect for any Oreo lover! There is an Oreo crust, creamy … Continue reading

Individual Cheesecakes
Cheesecake is one of my favorite desserts. It comes in a variety of flavors, can be fruity or sweet, and is usually a crowd pleaser. Mini cheesecakes are fun for a party or holiday because you can make a few different varieties, or perhaps make one plain batch but let your guests add their own toppings and have a simple yet delicious dessert. One of the recipes I want to share with you today is for Mini Salted Caramel Cheesecakes. If you like cheesecake and caramel, these are for you! The crust is a homemade graham cracker crust. The cheesecake has a creamy texture, sweet taste that might be considered a little rich to some, with a slight tanginess, which comes from the cream cheese. The mini cheesecakes are then doused in a generous amount of caramel sauce and sprinkled with salt. SO GOOD! The recipe can be found here. Start by preheating the oven to 350 … Continue reading

Easter Desserts
One of my favorite parts of Easter Brunch is the desserts 😊 Everything is decorated with bunnies, Peeps, little candy eggs, etc. It’s just so cute and festive! I love to explore and create new recipes using all the seasonal candies and that’s what I’m going to share with you today – dessert ideas for your Easter celebration. First up are Birds’ Nests. I’m sure you’ve seen these before for other holidays, sometimes referred to as Haystacks. These are super easy to make and only require a few ingredients. They are sweet, crunchy, and the perfect bite-sized treat! I have 2 different flavors, Chocolate and Peanut Butter. The Chocolate Birds’ Nests recipe can be found here. The Peanut Butter Birds’ Nests recipe can be found here. Let’s start with the Chocolate Birds’ Nests. Add the chocolate and peanut butter to a microwave safe bowl. Heat for 60 seconds, then stir. Heat for an additional 30 seconds and stir again. Continue … Continue reading

Instant Pot Cheesecake Bites
Cheesecake is one of my favorite desserts. I love the crumbly crush, the sweet and creamy filling, and the variety of toppings you can use. It’s such a customizable dessert! I recently tried my hand at cheesecake bites made in an Instant Pot and let me tell you, they did not disappoint. They had the perfect texture, were just the right size to satisfy a craving, and took very little time to make. Please note, you will need not only an Instant Pot but also an Instant Pot Silicone Egg Bites Mold to make either of these recipes. My first batch was Instant Pot Oreo Cheesecake Bites. This is the easiest cookies and cream dessert you will ever make. The “crust” is one Oreo and the filling has crushed Oreos mixed in. I could eat each and every cheesecake bite from this recipe in one sitting. Delicious! The recipe can … Continue reading

Haunted Hullabaloo
Halloween is fast approaching. For some, Halloween is a lifestyle and obsession, for others, it’s a day to be someone or something else. I personally love decorating the house, buying candy to pass out to trick-or-treaters, dressing up the dog…. but mostly, I love the food! I like to take a traditional dish and “dress it up” for Halloween. For example, a pepperoni pizza might have the pepperoni in the shape of a jack-o-lantern. You get the picture 🙂 This year, I have quite the spread. It’s going to be one big Halloween celebration at our house, starting with breakfast, and ending with dinner. Here’s what’s on the menu: Eyeball Donuts Spider Web Donuts Candy “Charcuterie” Board Eyeball Asparagus and Gruyere Tart Spider Web Loaded Potatoes Festival Feetloaf Mini Skeleton Cheesecakes Halloween is full of candy and treats so why not start the day with something sugary? Eyeball … Continue reading

National Dessert Day
National Dessert Day is October 14th and boy was I excited when I found out! It’s a day to indulge and enjoy sweets, and I love dessert…. any dessert….so I could not pass up sharing three of my favorite dessert recipes with you. When I say I love sweets, I mean I REALLY love sweets. If I’m offered a second helping of food, I would rather turn it down to save room for dessert. Or start my meal with dessert so I’m not too full afterward. National Dessert Day is my day 🙂 The 3 recipes I want to share with you today are: Tres Leche Cake Butterscotch Budino with Salted Caramel Pistachio Cheesecake First up is Tres Leche Cake. This is an authentic Mexican cake, soaked in a sweet milk mixture, and topped with homemade whipped cream, cinnamon, and berries. Tres Leche means “three milks” and that is … Continue reading

The Perfect Fall Meal
I recently had a bowl of Butternut Squash Bisque at a restaurant while traveling and it was one recipe I knew I had to remake! It took a few tries, but I have something luscious and delicious to share with you. Soup is such a popular fall dish; it warms the body and curbs those comfort food cravings as the temperatures start to drop. This Butternut Squash Bisque is thick, creamy, rich, and healthy – great for a cozy dinner! I’m calling this recipe “bisque” instead of “soup” because it’s so thick and creamy. The recipe can be found here. I start by chopping all the veggies and doing some prep work. This was the longest part of making the bisque and admittedly was my first-time preparing butternut squash, so it took some getting used to. If you’ve never cut squash before, start by cutting off both ends, then cut … Continue reading
