Korean Beef Lettuce Wraps
Lettuce wraps are something I like to make when I want an easy meal, a delicious meal, a nutritious meal, and something light. Life gets in the way, and you get busy, or you have a long day at work and don’t want to spend a lot of time in the kitchen. That’s where these lettuce wraps come in! They are fast to make and taste great – and you only need about 15 minutes to prepare them. The meat is a lovely combination of sweet and savory, the lettuce adds a nice crunch to each bite and the rice balances everything out. From what I understand, Korean beef is typically a thin sliced steak, but I’m opting for ground beef (and ground chicken). I want to share my recipe for Asian Chicken Meatball Lettuce Wraps with Mango & Coleslaw with you today. The nice thing about this recipe is it’s really 2 recipes in one. You can eat the Asian Chicken Meatballs as is or turn them into delicious lettuce wraps. Vegan Beyond Meat Thai Lettuce Wraps are a great recipe when you are looking for something healthy or are trying to “eat clean”. They are simple to make, scrumptious, and packed with flavor. I like how customizable they are because you can add any toppings of your choosing when creating your lettuce wraps. Greek Chicken Lettuce Wraps with Tzatziki Sauce
Greek Chicken Lettuce Wraps with Tzatziki Sauce are super easy to make, healthy, and refreshing. They are packed with zesty chicken, cool cucumbers, crisp tomato and onion, and tangy tzatziki sauce. It’s a burst of Mediterranean flavor! For us, these are simple weeknight meal. However, they would make great lunches because you can meal prep ahead of time and they are pretty light vs. filling. I recommend using bib lettuce, butter lettuce, or romaine hearts. They bib and butter lettuce create these “cups” for the ingredients to sit in and the romaine lettuce wraps the ingredients together well without ripping. If a lettuce wrap isn’t your thing, swap out the lettuce for a tortilla. The recipe can be found here. Start by making the Tzatziki Sauce. Cashew Chicken Lettuce Wraps are a delicious, low carb dinner option, and are better than takeout! That’s right…. I said it. Sometimes homemade meals are better than takeout. These lettuce wraps are restaurant style and come together in about 20 minutes. They are filled with tender chicken, cashews, ginger, garlic, and plenty of heat! Each lettuce wrap is full of flavor and make quite the healthy meal option. The recipe can be found here. Start by slicing the chicken into 1-inch pieces. Then, season with salt and pepper and set aside. An alternate option would be to substitute ground chicken or ground turkey if you prefer. You obviously don’t need to slice either of those but should still season with salt and pepper.
