If you read my last blog, you know how much we love sandwiches (or sliders) at our house.  Another food we are obsessed with is chicken wings.  They are so easy to make and can be pair with tons of different sauces to create different flavor combinations.  I want to share with you 3 new chicken wing recipes that are inspired by Asian and Mexican dishes. We’ve been eating a lot of meatballs at our house lately!  Our idea was to take traditional dishes and turn them into meatballs.  The idea is you get the same great taste but in bite-sized morsels.  The recipes I’m going to share with you today are easy to assemble, wonderful weeknight dinner options, crowd pleasers, and make great leftovers!  The fight at our house is no longer “what’s for dinner” but “which are we going to make first” 🙂 Orange Chicken Meatballs are everything you love about a classic takeout meal!  The flavor is incredible – you will think you are eating orange chicken from your favorite Chinese restaurant but with fewer calories and fat.  I like to serve the Orange Chicken Meatballs on top of Cilantro Lime Rice.  You could serve these with rice, noodles, or as is. Orange Chicken is sure to be a hit at your dinner table.  The tender chicken is fried crisp and coated in a thick orange sauce.  There is no lack of flavor in this sweet and tangy dish.  It’s one of my favorite Asian dishes and will make you forget about takeout. The recipe can be found here. Start by cubing the chicken into small pieces.  Then add the chicken to the batter and toss to coat.  Let the chicken sit in the batter for about 10 minutes, then toss again. Heat about 2 cups of peanut oil in a wok or skillet.  I prefer to use a wok because it’s easier to stir and contains a lot of oil splatter, but you will get very similar results with a skillet.  Add the chicken and fry until crispy, making sure the chicken is also cooked through.  Remove the chicken to drain while you make the sauce, keeping the chicken … Continue reading
