I’ve been craving something light and refreshing lately and made a few bruschetta recipes this weekend to snack on.  And by snack on I mean we made it into a meal 😊 If you follow my blog, you’ve probably read my other posts about bruschetta – Simple Summer Bruschetta Recipes (May 2023) and Easy Bruschetta Recipes (June 2023).  It’s such a diverse food.  You can have sweet, savory, spicy, citrus, vegetarian, meat-based, or any combination.  And it’s a bite-sized food so you can serve it as an appetizer or side dish or do what we did and make it a meal.  I have 3 recipes to share with you today.  One is sweet and refreshing, one is savory, and one is citrusy and refreshing. Talk about comfort food at its finest!  Baked Ziti is a classic pasta bake that is loaded with multiple kinds of melted cheese, sizzling red sauce, and tender noodles.  You can substitute the red sauce for a meat sauce, similar to a Bolognese, but I think the dish has plenty of flavor without the added meat. Ziti is a tube-shaped pasta, very similar to penne.  The only different is how the noodles are cut, in a straight line instead of at a slant.  You can find Ziti in the pasta aisle.  If for some reason you can’t find it, penne noodles are a great substitute.  The noodles are cooked al dente and are a little firm because they soften up while baking.  The cheese and sauce fills the inside of each noodles and sticks to the outside.  This is a hearty meal! Friday night is pizza night at our house.  With COVID, we’ve been cooking at home a lot more than ordering in or going out to eat so we’ve taken to preparing our own pizzas from scratch at home.  It’s been fun to play around with toppings and be creative with what we add to each pizza.  You can definitely stick with the traditional toppings if that’s what you prefer on pizza, but we like to branch out and make each pizza unique. This crust is a favorite of mine as well.  I’d prefer less dough and more toppings in each bite so I’m going to share with you my recipe for Thin Crust Pizza Dough.  This is the base I use for all my homemade pizzas.  It’s thin, doesn’t require any time to rise, and gets nice and crispy when you bake it on a pizza stone.  One plus side … Continue reading

Veggie French Bread Pizza is incredibly flavorful and the perfect weeknight meal, especially if you’re in a hurry!  It’s an alternative to traditional pizza and is completely customizable so you can tailor it to meet anyone’s taste preference.  It comes together in about 30 minutes or less. I selected vegetables to use that I knew both Andrew and I would like but use whatever you have on hand or whatever is fresh in your garden.  It’s your creation so it’s up to you! Vegan Lasagna is a flavorful and hearty dish that’s packed with protein.  Yes, it is vegan but even meat lovers will enjoy it!  It’s layered with tender noodles, cashew ricotta cheese, marinara, spinach, and topped with mozzarella cheese. The recipe can be found here. The ricotta cheese is thick, creamy, and is a great recipe to use in lasagna, pasta, pizza, and more.  I was skeptical when making the ricotta because this was my first attempt, but it did not disappoint.  I didn’t know what to expect but was pleasantly surprised and admittedly didn’t know vegan cheese could taste this good!  It was also very easy to make and only requires a few ingredients, most of which are pantry staples if you lead a vegan lifestyle.  It has a lovely texture and amazing cheese flavor.
