Chicken Bacon Ranch Kabobs
Chicken Bacon Ranch Kabobs are a simple 5 ingredient meal the whole family will love! They are very flavorful and a combination most people are already familiar with. Try them for a quick weeknight meal or serve at a summer BBQ. The kabobs are packed with crispy bacon, tender chicken, and are marinated in a homemade ranch dressing. The recipe can be found here. Start by adding the wooden skewers to a drinking glass filled with water to soak before grilling. This will prevent the wood from catching fire on the grill. Set aside until ready to use. I like to marinate mine for at least a few hours. Alternately, you can use metal skewers and skip the soaking process. My preference is to use 6” skewers but 10” skewers also work, you just won’t have as many skewers. Add the olive oil, black pepper, and ranch seasoning to a gallon size Ziploc bag. Shake slightly to combine. Slice … Continue reading

Chicken Souvlaki
Chicken Souvlaki is a classic Greek dish consisting of marinated grilled meat that is served with vegetables, creamy Tzatziki sauce, and pita bread. It is a low carb, low in fat and very fresh. So, for a very good reason, it’s a popular street food in Greece! Souvlaki means “meat on a skewer”. Pork is the most common type of meat used but chicken, beef, and lamb are other options. The recipe I am going to share with you today uses chicken. It’s packed with flavor and will bring a taste of Greece to your kitchen! The recipe can be found here. This is a 3-part recipe. You must prepare the chicken souvlaki (aka skewers), the yogurt sauce (tzatziki), and tomato cucumber salad. Each has a vibrant, fresh taste. You will feel satisfied without feeling full after this meal. Let’s start with the chicken. Combine the lemon juice, olive oil, … Continue reading

(Vegan) Grilled Kabobs
It’s a great time of year to break out the grill and spend more time outdoors enjoying a meal. Kabobs are a quick and easy meal to make and are very customizable; you can add any meat, vegetable, or seasoning of your choice. We make kabobs more often than I want to admit because they are so simple! Today I want to share with you 2 recipes for vegetarian/vegan kabobs. The first is Grilled Jackfruit & Vegetable Kabobs and the second is Grilled Vegetable Kabobs. Both are packed with tender vegetables, are healthy for you, and incredibly tasty to eat. Even if you aren’t vegetarian or vegan, you will enjoy these kabobs. They also make a great side dish for any other grilled meal; pair a vegetable kabob with a juicy hamburger or chicken breast. For the Grilled Jackfruit & Vegetable Kabobs, I chose to use bell peppers (in multiple … Continue reading

Pineapple Shrimp Skewers
We love to grill, and we love seafood, so we combined the two to create Pineapple Shrimp Skewers. These are prefect for a lighter dinner and come together so quickly! Plus, you can customize the skewers to different tastes by adding different fruits or veggies to accompany the shrimp. They are sweet yet citrusy, and very delicious! The recipe can be found here. Start by combining the coconut milk, hot sauce, soy sauce, lime juice, and orange juice in a bowl. Pour into a Ziplock bag, then add the shrimp to the bag and toss to coat. Seal the bag and place in the fridge to marinate for 1-2 hours. Make sure the shrimp is thawed and shelled before placing in the bag! While the shrimp marinates, soak wooden skewers in water. I like to fill a drinking glass with water and place the skewers inside. Once the shrimp is … Continue reading

Most Minnesotans are familiar with kabobs because we love to grill when the weather is warm. However, if you aren’t familiar with kabobs you are in for a treat! Kabobs are basically cubes of meat, fish, vegetables, fruit, and other foods placed on a skewer and grilled to perfection. And with the MN State Fair recently ending all I can think of is food on a stick so blogging about kabobs seemed like the perfect fit! I have 4 different kabobs to share with you today.
