Burrata, Prosciutto, and Arugula Flatbread with Fig Jam is a wonderful recipe for any time of year.  It’s light, flavorful, and packed with fresh ingredients.  It’s so damn delicious!  The burrata is rich and creamy, and one ball is the perfect amount for the flatbread.  The prosciutto is nice and salty and adds a nice texture to each bite.  The arugula is a nice pizza topping because it adds fresh flavor and a bit of crunch to each bite.  You often see this combination in recipes (burrata, prosciutto, arugula) so you know this pizza will be good! The recipe can be found here. Start by preheating the oven to 375 degrees F.  Place the naan flatbread on a baking sheet and spread fig jam on each flatbread. I recently had a yummy salad at a brewery we stopped at while traveling out of state and I couldn’t stop thinking about it!  I knew I had to try to recreate it when we got home, and the result is…drumroll please… Arugula Salad with Burrata & Prosciutto. The recipe can be found here. This salad is packed with flavor and is incredibly light and fresh!  The arugula is the base of the salad and has a slightly peppery taste.  The burrata cheese adds a lovely creamy flavor in each bit and pairs well with the salty prosciutto.  I had some extra chopped walnuts lying around from a previous recipe and thought, why not toss those in for a little crunch?  The dressing is a wonderful mixture of tangy balsamic glaze (drizzled over the top) and sweet honey and fig jam (spread on the bottom of the bowl).  You will love this salad and want to make it again and … Continue reading

My new favorite obsession (aka quick and easy weeknight meal) is Naan Flatbread.  You can create so many different variations by swapping out toppings and utilizing premade / store-bought naan flatbread.  My most recent creation is Walnut, Pear & Gouda Naan Flatbread.  It’s perfect for pizza night, to serve as an appetizer, or to serve alongside a salad or pasta dish.  Think fresh, juicy pears on top of warm, chewy flatbread with spicy arugula, walnuts, and a savory balsamic glaze.  It’s yummy! The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper. Place both flatbreads on the baking sheet and drizzle with 1 Tbsp olive oil (drizzle on both). Summer is fast approaching and one thing I look forward to eating more of is salads.  There is something about a big bowl of leafy greens with all the fixings that screams summer.  It’s a healthy meal and is light and refreshing on a hot day.  You also don’t often feel like you overate with a salad, and you can customize the ingredients to match your tastes. Baguette sandwiches are my new favorite thing!  There is something about a baguette that makes you feel like you are in a French café, sipping cappuccino, and enjoying local fare.  They are crisp on the outside and soft on the inside and make for a great sandwich.   Prosciutto & Arugula Baguette Sandwiches make the perfect meal.  The prosciutto is salty, the cheese is sharp, and the arugula adds some fresh flavor.  Pair it with some mustard or mayonnaise and jam, and you are set! Start by making the sandwich spread.  In a small bowl, stir together the mayonnaise and mustard.  This gives the sandwich a spicy and tangy taste.  You can use only mayonnaise or only mustard or neither, but I like the flavor of both combined. Have you ever eaten something and thought “this is the only way I can ever eat this again”?  That happened to me with this sandwich. Don’t get mad, but I have to admit I’m not really a fan of BLT’s.  They are fine sandwiches but there isn’t much to them.  It’s like they are missing something, and I think I found out exactly what’s been missing.  You have to revamp the entire sandwich…. bread and fry the tomatoes, candy the bacon, make a delicious aioli, and eat it all on a pretzel bun. It’s a souped-up BLT…a gourmet BLT if you will…it’s a Fried Tomato Sandwich with Pecan Bacon and Chipotle Aioli.  And, it’s delicious. The recipe can be found here. We have been obsessed with flatbreads lately, specifically Naan flatbreads.  Naan is a leavened, oven-baked bread that is moist and tender.  And makes amazing flatbreads 🙂 One reason we love to make flatbreads is they are quick and easy, can be customized to any flavor preference, and taste great.  You simply buy a package of Naan bread, choose your toppings, bake, and enjoy.  The possibilities are endless! I have a few of our favorite recipes to share with you.
