Chicken Parmesan is a classic dish and meatloaf is a family tradition shared by many so why not combine the 2?  The result is Stuffed Chicken Parmesan Meatloaf.  It’s a wonderful dish for a cold winter night or when you are looking for an elevated weeknight meal.  The chicken is tender and perfectly seasoned, it’s stuffed with lots of cheese, and served with marinara sauce to coat every bite. The recipe can be found here. Start by preheating the oven to 400 degrees F.  Line a loaf pan with parchment paper.  This will make removing the meatloaf from the pan easier once done baking. Add the ground chicken, ¼ cup marinara sauce, 4-5 minced garlic cloves, 2 Tbsp chopped parsley, Italian seasoning, onion powder, 2 Tsp salt, and black pepper to a mixing bowl.  Mix to combine then divide into 2 equal portions. Open Faced Chicken Parmesan Sandwiches will be your next go-to meal for a busy weeknight!  They are easy to make, hearty, and perfect for a cold winter night.  These open-faced sandwiches are packed with tender rotisserie chicken that’s coated in marinara sauce (or tomato sauce) flavored with garlic and added seasonings and are served open-faced on crispy garlic Texas toast with plenty of melted cheese.  They are delicious and come together in about 20 minutes (including prep and cook time). Chicken Parmesan Wings are a bite-sized version of the classic Italian dish.  The wings are breaded and baked and are perfectly juicy and tender.  They are then topped with marinara sauce and mozzarella cheese before serving.  They make a great appetizer or finger food to serve at a party.  For us, they make a wonderful dinner for 2.  I tend to serve the wings with additional marinara sauce on the side for dipping but a side of spaghetti noodles or some mashed potatoes would also pair well! Your favorite Chicken Parmesan dish is now available in sandwich form with Chicken Parmesan Sloppy Joe’s.  These Sloppy Joe’s are a delectable mixture of chicken, tomato sauce, mozzarella cheese, and breadcrumbs.  It’s a very family / kid friendly meal and tastes amazing!  Plus, it’s ready in under 30 minutes. Start by adding the breadcrumbs to a small skillet.  Heat over medium heat until lightly toasted.  Stir occasionally so they don’t burn!  Remove the breadcrumbs to a plate or bowl to cool and set aside.  Do not leave them in the skillet at they will continue to toast in the hot pan! We’ve been eating a lot of meatballs at our house lately!  Our idea was to take traditional dishes and turn them into meatballs.  The idea is you get the same great taste but in bite-sized morsels.  The recipes I’m going to share with you today are easy to assemble, wonderful weeknight dinner options, crowd pleasers, and make great leftovers!  The fight at our house is no longer “what’s for dinner” but “which are we going to make first” 🙂 Orange Chicken Meatballs are everything you love about a classic takeout meal!  The flavor is incredible – you will think you are eating orange chicken from your favorite Chinese restaurant but with fewer calories and fat.  I like to serve the Orange Chicken Meatballs on top of Cilantro Lime Rice.  You could serve these with rice, noodles, or as is. For many years I thought the word “slider” meant a tiny hamburger, but boy was I wrong!  Sliders are small sandwiches made with slider rolls that come in a variety of flavors, and they are all the rage.  Think meat and cheese melted together in the oven on a crisp roll – yum! Friends and family will be coming together with Christmas right around the corner.  Are you ready for all the festivities?  Are you hosting a party?  It can be stressful preparing for a get-together with a house full of guests, but it doesn’t need to be.  Some people have multiple places to stop in one night while others have one stop to make.  Whether your guest are coming and going or staying for the evening, you can serve a simple menu of appetizers.
