Flautas are a traditional Mexican dish consisting of a tortilla that is filled with meat and cheese and tightly rolled before frying. The recipe I want to share with you today is for Baked Chicken Jalapeno Popper Flautas, which is a combination of jalapeno poppers and chicken flautas. They are made with shredded rotisserie chicken, cream cheese, shredded cheese, jalapeno, and tortillas. This recipe is very easy to make, doesn’t take a lot of time, and makes the perfect appetizer or meal, depending on how many people you are serving. Every now again we get a craving for some Cajun cuisine. Something spicy (but not too spicy), hearty, and full of favor. Chicken wings are an easy fit because they are simple to prepare and make a great meal when paired with a side, like Cajun Rice… We’re clearly getting our Cajun fix with this meal 😊 Cajun Baked Chicken Wings are crispy on the outside and tender on the inside. They are marinated in a dry rub and baked to perfection before being tossed in a yummy Cajun butter sauce. Cajun Rice is very similar to Dirty Rice (if you are familiar) but without any meat. Chicken with Parmesan Garlic Rice
Chicken with Parmesan Garlic Rice is a phenomenal weeknight meal! It combines pan seared chicken with a cheesy, garlic filled bed of rice. The chicken is perfectly seasoned and tender, the rice is soft and pillowy with lots of fragrant garlic and parmesan cheese mixed in, and it’s topped with fresh, crisp parsley. It’s delicious and I hope you give it a try! The recipe can be found here. Start by seasoning the chicken tenders with salt, pepper, and garlic powder on both sides. I used chicken tenders but feel free to use boneless skinless chicken breasts or chicken thighs, if you prefer. Heat oil in a large skillet over medium heat. Spooky Season is upon us! Now that it’s after October 1, we can gear up for Halloween and all things spooky 😊 Halloween is a month-long celebration at my house. We watch all the classic movies and anything new we can find, gorge ourselves on candy, and decorate with probably too many pumpkins. But it’s fun and helps us get in the holiday spirit! I like to try new Halloween themed recipes every year too. It’s fun to have themed treats for a movie viewing party or to simply enjoy throughout the week. Salads Make Simple
If you haven’t checked out the Meat Counter at your local Festival Foods, I highly recommend it! You can find plenty of standard meat options; beef, chicken, seafood, etc. …things you would expect to see. BUT you will also find some specialty items you might not be familiar with. My favorite items to buy are the encrusted chicken breasts. They come in a variety of flavors; pecan, parmesan, buffalo, and tortilla are the most common. If you are lucky, you might find a different flavor from time to time. They are sold individually or pre-packaged as a pack of 2, depending on the store location. You can typically find some of each in our freezer for a quick and easy weeknight meal. Most commonly, I will bake the chicken breasts and serve them with a side salad or slice the chicken to eat on top of a bed of lettuce. Chicken Bacon Ranch Kabobs
Chicken Bacon Ranch Kabobs are a simple 5 ingredient meal the whole family will love! They are very flavorful and a combination most people are already familiar with. Try them for a quick weeknight meal or serve at a summer BBQ. The kabobs are packed with crispy bacon, tender chicken, and are marinated in a homemade ranch dressing. The recipe can be found here. Start by adding the wooden skewers to a drinking glass filled with water to soak before grilling. This will prevent the wood from catching fire on the grill. Set aside until ready to use. I like to marinate mine for at least a few hours. Alternately, you can use metal skewers and skip the soaking process. Honey Dijon Grilled Chicken Sandwiches should be on your menu this week! It’s sweet from honey, tangy from mustard, salty from bacon, and a little earthy / nutty from cheese. Pair it with some juicy, tender chicken and sandwich it between a pretzel bun or brioche bun and you have the perfect meal. A previous blog of mine for White BBQ Sauce Grilled Chicken discusses a wonderful condiment – White BBQ Sauce. Another recipe I created using the same BBQ sauce is for a White BBQ Sauce Grilled Chicken Flatbread. It’s absolutely divine! The White BBQ Sauce is tangy, zesty, and pairs well with grilled meat…or in this case, acts as a great pizza sauce 🙂 This flatbread recipe is simple to make and can be customized to any taste. I like to use chicken, cheese, red onion, and green onion. You can omit or add any items. Try adding mushrooms or green pepper, chopped bacon, you name it! White BBQ Sauce Grilled Chicken
If you’ve never had White BBQ Sauce, you are missing out! It’s delicious and worth trying! It has a zesty, tangy, mayonnaise-y base that is combined with vinegar, mustard, and spices. It’s a very popular condiment in Alabama from what I hear. One thing I love about this recipe is it makes enough to use between multiple recipes and have some to save for later. You can also play around with the flavors until you find your favorite combination – swap in a different mustard or vinegar, add different seasonings, etc. I pair the White BBQ Sauce with grilled chicken most frequently, which is the recipe I want to share with you today. Rosemary, Garlic & Bacon Chicken Burgers
Rosemary, Garlic & Bacon Chicken Burgers are packed with flavor yet light and almost more satisfying than a beef burger. You use this lovely rosemary and garlic mayo as a spread on the bun and inside the burger making it extra moist and juicy. I like to top the burgers with arugula, but you could substitute lettuce. I like the peppery, crunchy texture of arugula and this it pairs well with the flavors of the chicken burger. The recipe can be found here. Start by cooking the bacon according to package instructions. Transfer to a paper towel lined plate to drain the excess grease and set aside.
