Grilled Cheese and Bacon Stuffed Mini Bell Peppers are a fun appetizer to enjoy all summer long!  They are quick and easy to make, don’t take long to grill, and taste great.  This was our first time making them, but we were pleased with how they turned out.  We paired them with some grilled brats to complete the meal. The mini bell peppers are soft and tender and are filled with a lovely combination of cream cheese, bacon, and cheddar cheese.  They are very creamy, cheesy, and a little salty from the bacon. If you are looking for a simple yet filling and nutritious dinner, you’ve come to the right place.  Sheet Pan Sausage & Vegetables is all that and more!  It’s customizable, cooks on a sheet pan so you have easy cleanup and can easily feed a family of 4.  I like to use chicken sausage, but you can use any sausage of your choice.  I recommend using pre-cooked sausage because all you really need to do is reheat it with this recipe, not cook if fully.  My preference of veggies is potato, onion, and bell pepper but mushrooms, zucchini, cherry tomatoes, broccoli, or cauliflower would also work well.  All you need to do is chop, season, and bake.  Easy as that! Friday night is pizza night at our house.  With COVID, we’ve been cooking at home a lot more than ordering in or going out to eat so we’ve taken to preparing our own pizzas from scratch at home.  It’s been fun to play around with toppings and be creative with what we add to each pizza.  You can definitely stick with the traditional toppings if that’s what you prefer on pizza, but we like to branch out and make each pizza unique. This crust is a favorite of mine as well.  I’d prefer less dough and more toppings in each bite so I’m going to share with you my recipe for Thin Crust Pizza Dough.  This is the base I use for all my homemade pizzas.  It’s thin, doesn’t require any time to rise, and gets nice and crispy when you bake it on a pizza stone.  One plus side … Continue reading

Sheet Pan Roasted Gnocchi & Veggies is a great one-pan meal the whole family will love!  It’s full of toasted gnocchi (store bought but still delicious), roasted fresh veggies, herbs, and a dusting of Parmesan cheese.  It’s easy to throw together on a busy weeknight and is a meal that can be enjoyed year-round. The recipe can be found here. Start by preheating the oven to 425 degrees.  Line a baking sheet with parchment paper. Chop the bell peppers and onion.  You can use any color of bell pepper – it just makes the dish more colorful!  You don’t need to slice the tomatoes.
