A simple Ham & Gruyere Quiche is sure to please your taste buds so look no further for a quick and easy (yet delicious) breakfast that is perfect for a weekday morning or weekend brunch! If you are unfamiliar with gruyere cheese, it’s a traditional Swiss cheese that is semi-hard and has a rich, creamy, salty, and nutty flavor.  It works well as a substitute for Swiss cheese in recipes but also tastes great on its own with some crackers or bread.  In this quiche recipe, the gruyere cheese pairs well with the tender and salty ham and the soft and creamy eggs. One of my favorite parts of Easter Brunch is the desserts 😊 Everything is decorated with bunnies, Peeps, little candy eggs, etc. It’s just so cute and festive! I love to explore and create new recipes using all the seasonal candies and that’s what I’m going to share with you today – dessert ideas for your Easter celebration. First up are Birds’ Nests.  I’m sure you’ve seen these before for other holidays, sometimes referred to as Haystacks.  These are super easy to make and only require a few ingredients.  They are sweet, crunchy, and the perfect bite-sized treat!  I have 2 different flavors, Chocolate and Peanut Butter. Carbonara Baked Potatoes are something we tried recently, and I would definitely make again!  You are probably most familiar with Pasta Carbonara, but this is a spin on the traditional Italian dish.  Carbonara is essentially pancetta or bacon, with eggs, parmesan, salt, pepper, and maybe a little olive oil.  It’s comfort food at its finest and super yummy when paired with baked potatoes 😊 The recipe can be found here. Start by preheating the oven to 350 degrees F.  Line a baking sheet with parchment paper. Wash and dry the potatoes.  Use a fork to pierce the potatoes on all sides (plus a few extra for good measure).  Rub each potato with a little olive oil and place on the baking sheet.  I also like to sprinkle mine with a little salt but it’s optional.  Bake for 1 hour or until tender (aka you can easily pierce the potato with a fork). If you are looking for a quick and easy breakfast option I have just the thing – Ham and Cheese Breakfast Quesadillas.  These are all the rage at my house!  They come together in a matter of minutes, can be customized, are portable if you need to eat on the run, and are big enough to share (if you want 😊). My favorite ingredients to use are scrambled eggs, ham, and cheese.  Very simple but very tasty.  You can substitute the ham for breakfast sausage or add veggies like mushrooms, spinach, onions, peppers, etc.  Make it your own!  One thing I want to point out is that the meat needs to be pre-cooked.  You will not be cooking or heating the quesadilla enough to fully cook the meat through.  Sliced deli ham works great because it’s thin and can be used as is or chopped into small pieces.  Pre-cooked breakfast sausage (I’m partial to the crumbles) also works well.  If you … Continue reading

‘Tis the season for some festive food and what better way to celebrate the holidays than with pancakes!  Kidding…kind of 😊 Pancakes are one of those items we have once or twice a year but when we do have them, we remember how much we enjoy them.  They are filling, a hearty meal for cold weather, can be enjoyed any time of day (raise your hand if you’re a fan of brinner…breakfast for dinner), and can be prepared in a variety of flavors.  Since it is holiday season, what better way to enjoy pancakes than in some traditional holiday flavors?  That is my goal with this blog post; to provide you with some yummy new recipes and hopefully give you recipe ideas for Christmas morning or another meal around the holidays. Pizza for breakfast?  Yes please!  I could, without a doubt, eat pizza for breakfast every day.  I know there is conflicting information out there…is pizza a breakfast food?  Do you eat it hot or cold?  And so on.  This recipe, however, is specifically for BREAKFAST pizza, so you can’t go wrong! The recipe can be found here. The crust is made of hash browns, not a traditional pizza crust.  It gives it a nice crunch while also including a favorite breakfast item in the recipe.  The top is loaded with eggs, cheese, and the veggies of your choice.  You can bake the eggs to meet your taste; bake a little longer for no runny yolk or bake a little less for a runny yolk.  Don’t like bell peppers but love mushrooms?  Skip the peppers and use mushrooms.  Get the idea?  The recipe does list specific ingredients, but you can substitute to meet your needs. Sheet Pan Pancakes are like one giant perfect pancake!  Once you make these or try these, there is no going back.  No standing at the counter flipping pancakes for an hour over the griddle!  Simply bake, slice, and devour.  They are moist, fluffy, and easy to assemble. The recipe can be found here. Start by preheating the oven to 425 degrees F.  Generously spray a baking sheet (11×17 size) with cooking spray. In a large mixing bowl, whisk together the pancake mix, milk, and eggs.  Any brand of pancake mix will work just fine. Pour the batter onto the prepared baking sheet.  It might look like the batter isn’t filling much of the baking sheet, but it will rise as it bakes so you don’t need to add additional batter.  If you do, your pancakes will turn out more like cake! Breakfast Enchiladas are a great way to start your day!  Enchiladas are tortillas that are filled with various ingredients, rolled up, covered with sauce, and baked to perfection.  For my Breakfast Enchiladas, I’m swapping a typical enchilada sauce for whisked eggs, and filling the inside with cheese and diced ham. These Breakfast Enchiladas can be customized to meet your taste preferences.  I used diced ham, but you could use bacon or sausage.  I used white onion, but you could substitute with bell peppers, mushrooms, spinach, etc.  Really make these your own and use the recipe below as a guide for quantities! Two of my favorite things to eat are breakfast foods and pizza.  There is nothing like a good brunch with plenty of options to choose from but there is also something so satisfying about leftover pizza for breakfast.  So really, pizza is a breakfast food 🙂 Today I want to share with you my recipe for a super simple Breakfast Pizza.  We actually ate this for dinner one night (breakfast for dinner = brinner at our house) and it was the perfect meal, but you could easily whip this up on the weekend for breakfast.  It’s a quick recipe that is ready in under 30 minutes and tastes incredible.  The recipe is also customizable.  We had cheese, bacon, and egg pizza but you could substitute the bacon with sausage, add some diced onions or bell peppers, etc. The recipe can be found here.
