Top o’ the Morning
St Patrick’s Day is fun day to celebrate, whether you are Irish or not. You can typically find a parade or two around town, Irish themed food and drinks at your favorite restaurant or bar, and plenty of people wearing green! It’s a festive day to celebrate and will unfortunately look a lot different this year due to COVID. BUT…that doesn’t mean you can’t still celebrate at home! We are going to celebrate by having breakfast for dinner. You don’t tend to hear of too many Irish breakfast foods but we’re going to make it work! The food doesn’t have to be Irish necessarily but can be themed to fit the event. In this case, we’re going to make Shamrock Cinnamon Rolls and Shamrock Fried Eggs. Cookies for Breakfast!
Who doesn’t love a good chocolate chip cookie? I consider myself somewhat of a cookie connoisseur. I will eat *almost* any flavor and typically have a container of cookies on the counter at the ready……and maybe a backup in the freezer. I just love cookies! I kept seeing fun posts on social media of people eating tiny cookies as cereal and thought 1) what a neat idea, and 2) why haven’t I tried this? I had to get in on the craze and participate in the new tiny cookie cereal trend. The result is Mini Homemade Chocolate Chip Cereal that led me to one delicious meal! The recipe can be found here. Your Favorite MN State Fair Food…. At Home!
The MN State Fair is cancelled. Those are words I never thought would come out of my mouth, but it’s 2020, and anything is possible this year 🙂 And what a year it’s been! Luckily, some food trucks and vendors are still able to sell their highly demanded food at various locations around town. If you have ventured out and waited in line for any of your favorites – good for you! If you have not, there’s still time. OR…. drum roll, please…. you can enjoy fair food in the comfort of your own home. Just think….no crowds, no waiting in line, no overcrowded buildings, no “sold out” signs, etc. I love the MN State Fair so if I have to miss out on one of my favorite summer traditions, this is as good as it gets. French Toast Bake
French Toast Bake combines all your favorite French Toast flavors in one baking dish that is easy to make and delicious to eat! It’s a favorite make-ahead breakfast dish in my household. You prep the French Toast Bake the night before, refrigerate overnight, and bake and enjoy in the morning. Super easy with no fuss! The recipe can be found here. Start by cutting the bread into 1-inch pieces. I like to use either sourdough or French bread. You can buy pre-sliced bread or whole bread. Then place the bread pieces in a greased 9×13 pan. You want the bread to be layered pretty evenly. In a mixing bowl, combine the eggs, milk, heavy cream, sugar, and vanilla. Pour the mixture evenly over the bread, making sure to coat every piece. Homemade Crepes
Homemade crepes are perfect for any occasion! They are thin, tender, and easier to make than you think 🙂 You only need 6 ingredients to make these French-style homemade crepes. No blender or special pan required (although it does help). The recipe can be found here. Start by combining the eggs, milk, flour, butter, vanilla, and salt in a mixing bowl. Whisk together until smooth – you don’t want any chunks in the liquid! Then let the batter rest for about 10 minutes. I have a crepe pan that I like to use but you don’t need a special pan to make crepes, you just need a flat-bottomed non-stick skillet. You want to heat the pan over medium heat. Pancake Breakfast Tacos
Just when you thought breakfast couldn’t get any better, along comes Pancake Breakfast Tacos! All your favorite breakfast foods are combined in a pancake shell to create these breakfast tacos; piled high with scrambled eggs, bacon, sausage, etc. Super yummy and easy to make, so start your morning right with Pancake Breakfast Tacos! The recipe can be found here. Start by making the pancake mixture according to package instructions. Heat a flat-bottomed skillet or griddle. Once hot, add the pancake batter and cook the pancakes according to package instructions. I made 6 large pancakes but make however many batches necessary to feed your family or guests. If you are making multiple batches, I recommend preheating the oven to 200 degrees and placing the cooked pancakes on a baking sheet in the oven to stay warm while the rest of the pancakes are cooking. Instant Pot Frittata
Frittata’s make a great breakfast, brunch or brinner (breakfast for dinner as we call it at our house). A frittata is an egg-based dish, similar to an omelet or quiche, with your choice of veggies, meat, or cheese inside. I like to make frittata’s in an Instant Pot because it requires a lot less work – use one pot, set the timer, and go about your day until the timer ends. The frittata is cooked to perfection with fluffy eggs, tender veggies, and melted cheese. The recipe can be found here. Start by doing all the prep work. Chop the veggies and set aside. National Waffle Day
Today is National Waffle Day and what better way to celebrate than with some yummy waffles! Traditional waffles are best when smothered in syrup or topped with fried chicken or fruit. I bet really anything would be delicious when paired with a waffle 🙂 but I thought it would be fun to try something different. I’m making Cinnamon Roll Waffles and Hash Brown Waffles to enjoy while observing this fine holiday! Cinnamon Roll Waffles are exactly what you think – waffles made from cinnamon rolls. These are SUPER easy to make and take about the same amount of time as a traditional waffle when using a waffle iron. Still undecided? Fall Themed Breakfast Showdown
It’s the time of year for all the pumpkin flavored lattes, pancakes, cookies, pasta, etc. starts popping up. If you can eat it, I’m sure someone has tried adding pumpkin flavoring to it! It’s a craze that I’m more than happy to participate in 🙂 But, another fall favorite I don’t think gets enough credit is apple cider. I thought it would be fun to do a taste test of pumpkin vs apple cider with breakfast foods to see which the fan favorite is. I made the same two items with both flavors.
