Chicken Souvlaki is a classic Greek dish consisting of marinated grilled meat that is served with vegetables, creamy Tzatziki sauce, and pita bread.  It is a low carb, low in fat and very fresh.  So, for a very good reason, it’s a popular street food in Greece! Souvlaki means “meat on a skewer”.  Pork is the most common type of meat used but chicken, beef, and lamb are other options.  The recipe I am going to share with you today uses chicken.  It’s packed with flavor and will bring a taste of Greece to your kitchen! Greek Lemon Rice with Chickpeas is an amazing one-pot dish!  It is full of great Mediterranean flavors and is packed with so many herbs and veggies.  You’ll think you’re somewhere warm and sunny when eating this dish 🙂 The recipe can be found here. Preheat the oven to 375 degrees.  Make sure you have a large ovenproof skillet to use.  You will start by heating ingredients on the stove and will eventually move the skillet into the oven, so you want to make sure you are using something rated for oven use.  I used a large cast iron skillet, but a Dutch Oven would also work well. Stuffed Peppers are a favorite at my house.  There are so many possibilities for stuffed peppers so you can really cater the filling to meet any dietary need.  Our recent craving has been for Greek Orzo Stuffed Peppers.  They are quick to make, fairly simple to assemble, vegetarian / vegan, healthy, and tasty 🙂 You can make this dish more colorful by using a combination of green, orange, red, or yellow bell peppers.  I’m partial to red bell peppers for no particular reason so that is what I choose to use.  I typically serve these as a main dish, but they could easily be a side dish if served with other items. We have been obsessed with flatbreads lately, specifically Naan flatbreads.  Naan is a leavened, oven-baked bread that is moist and tender.  And makes amazing flatbreads 🙂 One reason we love to make flatbreads is they are quick and easy, can be customized to any flavor preference, and taste great.  You simply buy a package of Naan bread, choose your toppings, bake, and enjoy.  The possibilities are endless! I have a few of our favorite recipes to share with you.
