(Vegan) Grilled Kabobs
It’s a great time of year to break out the grill and spend more time outdoors enjoying a meal. Kabobs are a quick and easy meal to make and are very customizable; you can add any meat, vegetable, or seasoning of your choice. We make kabobs more often than I want to admit because they are so simple! Today I want to share with you 2 recipes for vegetarian/vegan kabobs. The first is Grilled Jackfruit & Vegetable Kabobs and the second is Grilled Vegetable Kabobs. Both are packed with tender vegetables, are healthy for you, and incredibly tasty to eat. Margarita Chicken
Margarita Chicken is one of my new favorite dishes. It’s quick and easy to make, healthy, and a tasty meal you can enjoy all year round. The chicken is grilled to perfection, then topped with melted cheese, pesto, tomatoes, and basil. The recipe can be found here. Here’s how you make it: Start by combining the olive oil, salt, pepper, garlic powder, and Italian seasoning in a bowl. Add the chicken and toss to coat. In a separate bowl, combine the tomatoes, basil and lemon. Heat a skillet over medium-low heat. Cook the chicken on each side for about 8-10 minutes. I like to cook the chicken low and slow, so I don’t burn the meat if the chicken breasts are thick. You can always cover the skillet to help evenly distribute the heat. Labor Day Grilling It’s time to fire up the grill for your Labor Day celebration! I plan to spend the day outside enjoying the weather with family and friends. Whatever you plan to do, I hope you enjoy some delicious food and get good use of your grill before cooler weather hits. It’s the perfect day for grilling and a picnic. I have a handful of grilling ideas and side dish suggestions for you to try to have the perfect spread. Let’s start with the meat! Plank Grilled Salmon
I have a secret to share. Andrew and I both love fish but have never made it at home before. Can you believe it? Well, we were feeling ambitious last night and decided to try making grilled salmon. Turns out it was super simple to make! A friend recommended we use a grilling plank because it gives the fish great flavor so we bought Fire & Flavor Cedar Wood Grilling Planks. You can find these by the meat counter at Festival Foods. They are sold in a pack of 2 and you can use each one about 2-3 times before throwing away so you get a few meals out of them. They are perfect for cooking beef, pork, chicken, salmon, and other seafood so you aren’t limited to any one item. The tricky part is planning ahead. Small Bites
It’s hard to believe that summer is already coming to an end and it’s time to begin planning the Labor Day menu for the last hurrah of summer. Small bites to share are a great option to bring for potluck gatherings on the holiday weekend or to serve for a family buffet dinner. One of the most tasty bites we can think of are Mini Ham Sandwiches, a sweet and savory mix of flavors and…you can prepare them the night before. If you’re in the mood to do some frying and serve some hot bites, Beer Battered Cheese Curds or Fried Cream Cheese Wontons are very easy to prepare and always a favorite with family and friends. Breakout the bun!
Time to breakout the bun and enjoy some great burgers. Burgers are an easy dinner solution and so much better when you make them at home! First up is our Guacamole Burger, we think Guacamole is always welcome on the table and we like it chunky with nice large pieces of avocado. This burger is served with bacon slices and we think the easiest way to cook bacon is in the oven. We placed our bacon slices on racks on a baking sheet and baked at 350 degrees until cooked thoroughly. If you’re looking for a ground turkey burger this is our fav – this Pesto Turkey Ciabatta Burger is delicious and you may substitute the ground turkey with ground chicken.
