Potato Tacos with Jalapeno Cilantro Sauce are a delight! They are vegetarian as well as vegan, so they make the perfect meal for Meatless Monday (or any day of the week). Plus, they are delicious! And who doesn’t love tacos? The Jalapeno Cilantro Sauce is a wonderful condiment for these tacos. It add a citrusy, tangy, flavor to the tacos. All your favorite breakfast foods are combined in a pancake shell to create these breakfast tacos; piled high with scrambled eggs, bacon, sausage, etc. Super yummy and easy to make, so start your morning right with Pancake Breakfast Tacos! The recipe can be found here. Start by making the pancake mixture according to package instructions. Heat a flat-bottomed skillet or griddle. Once hot, add the pancake batter and cook the pancakes according to package instructions. I made 6 large pancakes but make however many batches necessary to feed your family or guests. If you are looking for a quick 30-minute meal, that is also warm and hearty, to get you through the cold weather I have the perfect solution. It’s Chicken Taco Soup. The soup is loaded with chicken, beans, corn, and tomatoes, and is packed full of flavor. Most of the item you probably already have in your pantry, so it’s easy to whip together during the week.
