Slow Cooker Shredded Ranch Chicken is a delicious yet versatile recipe that is perfect for any day of the week!  With only 4 ingredients needed, you’ll be able to whip it up in no time (or whip it up and start your slow cooker, lol).  The taste of the chicken reminds me of Cool Ranch Doritos…it’s a little tangy and zesty.  The chicken is very tender and moist, and the seasoning is a combination of ranch and taco seasoning making is super flavorful.  The chicken can be enjoyed as is or served as a sandwich, on top of a salad, over rice with veggies, in tacos, fajitas, or quesadillas. Ciabatta Melts with Chicken, Bacon & Pepper Jack are delicious sandwiches that are easy to make and are sure to be a hit!  It’s a classic sandwich you could get at your local bistro or café style restaurant, and I thought, why not try making it at home?  It has warm, crusty ciabatta bread that is filled with juicy chicken, crispy bacon, spicy, melted cheese, and tender veggies.  The sandwich tastes light and won’t leave you feeling too full.  You can’t go wrong with a warm sandwich on ciabatta! Balsamic & Guinness Chicken Wings are a unique yet delicious appetizer or dinner option.  They have quite the pleasant flavor…it’s a little tangy and sweet.  I think Guinness is mildly sweet with a hoppy/bitter flavor and notes of coffee, almost tastes like roasted almonds.  Balsamic is rich in flavor with a mellow tartness and some acidity, kind of herby.  But both complement each other nicely. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper.  Line the chicken wings on the baking sheet, leaving a little space in between.  Drizzle with olive oil and sprinkle with salt and pepper. Bake for 40 minutes, flipping halfway through, or until an internal temperature of 165 degrees F is reached. I was gifted a Cast Iron Balti Dish and immediately started researching recipes and the type of cuisine to prepare in it.  I learned A LOT!  Balti is a cooking method traced back to Southern Asia and is named for the dish in which it is made.  It’s similar to Indian curries and contains meat, vegetables, and spices.  The main difference is how the dish is served but the ingredients used are cooked the same way.  Balti dishes are stir-fried with vegetable oil over high heat in a flat-bottomed wok.  Most often lamb is used, but you can find chicken or pork recipes as well. Chicken Pesto Ciabatta Melts are perfect for your next weeknight meal!  Think of a classic bistro sandwich with warm, toasted bread, tender, juicy chicken, fresh, ripe tomatoes, melted cheese, and an herby pesto to top it off.  That’s what this recipe is, a wonderful hot sandwich option that fills the void for dinner (or lunch).  It’s filling without leaving you uncomfortably full.  The fresh ingredients make it feel like a light sandwich.  I personally think ciabatta is the perfect bread for a sandwich.  It’s soft and airy inside with a crispy crust so you can’t go wrong! Creamy Cajun Chicken Pasta is my newest weeknight recipe that your family will love!  It’s a filling and delicious pasta that comes together in about 30 minutes.  It’s rich, creamy, a little spicy, and packed with wonderful ingredients.  I will admit…when I was originally working on this recipe it was going to be soup, not pasta, but plans changed, and soup just wasn’t in the cards that night.  I blame the noodles for absorbing so much of the liquid that would have been yummy soup, but the recipe still turned into something great, and we had a lovely pasta dinner.  One thing I love to do is play around with recipes so even though my original plan didn’t work out, I was able to recover and still serve dinner.  Has that ever happened to you? Cinco de Mayo is coming soon – it’s Friday, May 5th.  Cinco de Mayo quite literally means the 5th of May in Spanish so it’s easy to keep track of the date 😊 If you aren’t familiar, here are 3 fun facts about Cinco de Mayo, 1) it’s not Mexico’s Independence Day, 2) it’s not a national holiday in Mexico, 3) it celebrates Mexico’s victory against Imperial France.  As you can see, it’s a relatively minor holiday that is celebrated regionally in Mexico….and pretty much everywhere in the United States.  In Puebla, Mexico it is celebrated with parades, parties, music, folk dancing, and traditional foods.  In the United States, it’s celebrated with Mexican food.  Are you sensing a theme to my blog post?  I’m going to share fun Mexican fares to enjoy for Cinco de Mayo or anytime you are craving Mexican food. Slow Cooker Chicken Philly Cheesesteak Sandwiches are loaded with tender chicken, bell peppers, and onions, piled high on a hoagie roll and covered in melted cheese.  It’s a tasty meal that’s easy to make!  I think it’s perfect on a cold winter night or on a busy weekend because your slow cooker is doing most of the work. Start by placing the chicken in a slow cooker.  I recommend using boneless skinless chicken breasts but if you prefer to use chicken thighs, make sure to trim some of the fat off first.  Sprinkle with salt, pepper, garlic powder, and paprika.  Season to taste.  I tend to add more garlic powder because we love the flavor. Meatloaf is a wonderful comfort food and if you’re from the Midwest…it’s a bit of a staple.  It’s one of those meals you either love or hate.  If you hate it, you probably ate it too much as a kid 😊 but I think you should give it one more chance and try my Chicken Bacon Ranch Meatloaf.  I’m a chicken-bacon-ranch fan and consider myself to be somewhat of a CBR (chicken-bacon-ranch) connoisseur.  If it’s available at a restaurant in some capacity, chances are I’ll order it.  I think it’s delicious and love the flavor combination.
