The Best French Onion Soup
French Onion Soup has always been one of my favorite soups. Traditional French Onion soup is a soup based on meat stock and onions, served with croutons or bread and grated cheese on top. Usually beef stock is used but my recipe calls for chicken stock. The reason I use stock is it creates a slightly thicker liquid as opposed to broth, and the chicken stock yields better flavor in this dish (in my opinion). This is by far the best French Onion Soup I have had! It’s worth the time spent caramelizing the onions to have the perfect flavor. The Perfect Fall Meal
I recently had a bowl of Butternut Squash Bisque at a restaurant while traveling and it was one recipe I knew I had to remake! It took a few tries, but I have something luscious and delicious to share with you. Soup is such a popular fall dish; it warms the body and curbs those comfort food cravings as the temperatures start to drop. Chicken Gnocchi Soup is the perfect comfort food! It’s creamy, hearty, and delicious with lots of veggies and chicken in every bite. This soup is wonderful on a cool night or when you’re looking for something a little more filling. The recipe can be found here. Gnocchi is basically a mini dumpling made from potato and flour. They are dense, soft, and small in size. They are yummy in soup and add great texture. You can typically find gnocchi in the pasta section of the grocery store and sometimes in the freezer section by other frozen pasta. This soup is pretty simple to make. Buffalo Chicken Chili
My new favorite slow cooker chili recipe is for Buffalo Chicken Chili. It has the perfect amount of spice, a creamy base, tender chicken in every bite, and only take about 10 minutes to assemble. Then…set it and forget it! There is so much flavor packed into this recipe, you’re sure to like it! The recipe can be found here. Start by adding the chicken to the base of the crock pot, then layer all other ingredients on top – beans, corn, tomatoes, chicken broth, Ranch dressing mix, buffalo wing sauce, onion powder, garlic powder, celery salt, dried cilantro, and salt. Clean Eating Reset
Summer has come to an end and fall is officially here. For our family, summer is all about having fun and indulging. Family vacations, entertaining the neighbors, barbeques, the Minnesota State Fair and lots of birthday parties are all things that we enjoy during the summer. The parties don’t end in the fall, but choosing some healthier options is a must for me. With this change of seasons and transition back to a more regular schedule, I’m also ready to make some healthy changes to my nutrition so that I can get my sugar cravings under control, have more energy and simply nourish my body with clean, whole foods. Cheese Ravioli with Pumpkin Alfredo
Any meal with pumpkin in it is the definition of fall. Some are skeptical of pumpkin being a pasta sauce and I used to agree with them…until I tried it! Let me tell you, it was delicious! It’s a great mix of unusual flavors that actually complement each other very well. The recipe I would like to share with you today is for Cheese Ravioli with Pumpkin Alfredo. The sauce is creamy and luscious, and a great autumn flavor as opposed to traditional Alfredo. I chose to use cheese ravioli, but you could substitute any flavor of ravioli or even use tortellini in this dish. You could also made homemade ravioli if you have the necessary tools, and time. Homemade tomato soup is quite possibly one of the best comfort foods you can have. It’s rich and creamy, smooth in texture, and keeps you warm on a crisp fall day or cold winter night. I want to share a recipe with a slight twist on traditional tomato soup because it includes 3 cheese tortellini. This is a one pot meal that won’t disappoint. Zucchini Noodles with Pesto Chicken
Zucchini noodles are all the rage and a low carb way of enjoying pasta. If you have a spiralizer you can easily make your own “zoodles” but if you don’t have a spiralizer you can find pre-spiraled noodles at your local Festival Foods. I think zoodles are a light yet delicious substitution for traditional pasta noodles. They will fill you up but without the heavy, overly-full feeling, if that makes sense. My new favorite recipe is Zucchini Noodles with Pesto Chicken. It’s super easy to make and only takes a few ingredients! The recipe can be found here. Start by marinating the chicken.
