Escape to the Mediterranean for a fun weeknight dinner that will feed the whole family and leave you feeling satisfied!  The recipe is for Sheet Pan Mediterranean Shrimp.  As the name suggests, the recipe is cooked entirely on a sheet pan, so you have easy assembly, easy cleanup, and you can use the sheet pan as your serving platter. You can eat the shrimp as is and enjoy the rest of the sheet pan ingredients as a salad or combine all ingredients, so you get a little of everything in each bite.  The shrimp is cooked to perfection and absorbs some of the other flavors while baking.  I think red onion can be quite potent but when it’s combined with the other Mediterranean flavors, it really mellows out but still give you a nice crunch.  The olives and feta cheese sprinkled over the top really bring it all together. Sheet pan meals are becoming more frequent at our house.  They are easy to assemble and quick to cleanup because all the cooking happens on…you guessed it…a sheet pan.  We have a 2-person household as well, so the sheet pan meals are often enough to have for 2 meals.  Depending on how busy we are during the week, this is either 2 dinners or 1 dinner and 1 lunch for us.  The combinations are endless as well!  We primarily make chicken with a vegetable on the side, but you could try turkey breasts, pork chops, etc. with any vegetable (or vegetables) of your choosing. Halloween is fast approaching. Lemon Orzo with Roasted Vegetables is not your typical pasta salad.  It’s packed with texture and flavor yet is very light and refreshing.  It works well as a side dish or as a standalone meal.  I think it’s best served warm but room temp or chilled is also fine, it’s all about your preference. The vegetables are delicious when roasted because they are slightly caramelized.  I like to use bell pepper, asparagus, cherry tomatoes, and red onion but you can substitute any veggies you like – eggplant, zucchini, squash, mushrooms, etc.  You can really make this your own by using the veggies you crave. You can also top this salad with pine nuts for a little crunch or some crumbled feta cheese.  If you choose to skip the cheese, this is a great vegan based dish. Friends and family will be coming together with Christmas right around the corner.  Are you ready for all the festivities?  Are you hosting a party?  It can be stressful preparing for a get-together with a house full of guests, but it doesn’t need to be.  Some people have multiple places to stop in one night while others have one stop to make.  Whether your guest are coming and going or staying for the evening, you can serve a simple menu of appetizers. I think this is a great idea because 1) your guests can eat as much or as little as they like, 2) you can have a large variety of options to choose from, and 3) you spend more time socializing with your guests than you do in the kitchen. Christmas is my favorite holiday to host.  I think it’s due to my love of Christmas lights and decorations, so our house is always over the top!  Plus, there are so many festive serveware options available that you can change up your table display as often as you like.  (New Christmas plates…hint hint, Andrew 😊) Sometimes I like to go all out with appetizers and the main course but there isn’t anything wrong with keeping it simple if you prefer.  I truly enjoy cooking for others and putting on a big spread but also want to enjoy the holiday with family and friends.  So, I decided to keep my menu simple this year.  I’ll be serving a few appetizers with some of the drinks from my Christmas Cocktails blog post. The fresh Halibut season has begun in the US and the fillets have been awesome! One of our favorite recipes for Hallibut is Fish Tacos with Chunky Guacamole. This recipe also works well for Shrimp Tacos, use some shredded Spanish Manchego Cheese for a lovely combination with the shrimp. Guacamole is also a healthy snack that takes very little time to prepare, we have Guacamole at our house at least once per week. Guacamole is a lovely side to so many dishes. Another fabulous recipe for Halibut is Roasted Halibut with Red Bell Peppers, ask our butchers to remove the skin on the Halibut for you to save time.   One item always on our shopping list at this time of year is Asparagus, we had it for dinner three times last week! Steaming and roasting the asparagus are my favorite methods to cook the Asparagus. Roasting is so simple just wash and trim the Asparagus toss to coat with olive oil and a tiny squeeze of lemon and sprinkle of kosher salt. Lay flat on a baking sheet and bake in a 375 degree oven for 15 minutes. Another simply delicious recipe is Grilled Asparagus Salad with Fried Eggs. Asparagus would be a wonderful side dish to many of our recipes included in our menu for the week.
