Rosemary, Garlic & Bacon Chicken Burgers are packed with flavor yet light and almost more satisfying than a beef burger.  You use this lovely rosemary and garlic mayo as a spread on the bun and inside the burger making it extra moist and juicy.  I like to top the burgers with arugula, but you could substitute lettuce.  I like the peppery, crunchy texture of arugula and this it pairs well with the flavors of the chicken burger. The ultimate handheld slider sandwiches are Herbed Chicken Parmesan Sliders.  They are made with ground chicken, not traditional breaded chicken, and are perfect for a crowd or when you want a lighter dinner.  Top with melted mozzarella cheese, fresh marinara sauce, and crisp basil, and you have the perfect slider!  I think the sliders taste best on toasted ciabatta rolls (who doesn’t love ciabatta?) but slider buns will also work just fine.  The ciabatta makes the sliders feel more authentic and Italian. My first step is to bake the ciabatta rolls.  I buy bake and serve rolls, so I always get that out of the way before I prep any of the other ingredients.  Then I set them aside to cool while working on the rest of the recipe.  You can skip this step depending on the type of rolls you are using. We recently tried a recipe for Bacon Apple Chicken Burgers with Dijon Sauce, and it was amazing!  The burgers are a little sweet from the apples and a little salty from the crispy bacon.  Add the Dijon sauce and you have a little slice of heaven!  The Dijon sauce is a combination of Dijon mustard, mayonnaise, and maple syrup so it is sweet yet tangy, and I could not get enough of it.  All the flavors in this burger pair well and your taste buds will be happy 😊 The ingredient list looks long but these burgers really are easy to make.  And you will most likely have most of the ingredients at home already, so give them a try! There is nothing like a juicy burger hot off the grill, chilled cocktail in hand, and warm weather to cure those winter blues.  I want to share some of my favorite chicken/turkey burger recipes with you now that it’s starting to feel like summer!  These are all a nice break from typical hamburgers and healthier for you (well, maybe not once you add all the toppings).  I think they are very flavorful, simple to make, and delicious to eat.  The first recipe I want to share is for Buffalo Chicken Burgers.  These are ¼ pound burgers that taste just like buffalo wings but without the mess.  Who wouldn’t want that?  I like to top my burger with extra buffalo sauce and a little ranch dressing, then add a small amount of each onto my plate for extra dipping sauce.  This burger would also pair well with blue cheese.  The recipe … Continue reading

One thing I’ve always been curious to try is a Juicy Lucy. I’ve never had the opportunity because I don’t eat red meat so I decided to create my own version using ground chicken. It took some tweaking to get the texture and size of the patty right but the result was yummy! The recipe can be found here. I didn’t want to use plain ground chicken without any seasoning because the burger wouldn’t have much flavor then. I followed the seasoning recipe from the Buffalo Chicken Penne recipe. I use this seasoning mix all the time at home. It’s great on a grilled chicken breast or veggies because it adds a salty flavor with a bit of spice, but now I’m getting off topic! It’s a busy time of year with summer coming to an end, school starting, preparing for fall and all the delicious food that comes with it (more on that later) but we were able to squeeze in one more weekend at the cabin!  We opted for a fairly simple menu because the weather was perfect and we wanted to make the most of the holiday weekend by spending as much time outside as possible. Let’s be honest, no one is up early at the lake, but when we do get up we are ready for some Bloody Mary’s and breakfast.  Our favorite is Tito’s Vodka with equal parts Tomato Juice and Clamato plus all the fixings!  We used Ellsworth, WI Cheese Curds, pickles, and summer sausage for our skewers.  Refreshing and a great way to start the day!
