Camp Cuisine
We recently went on a camping trip, and it was HOT. Hotter than normal this time of year which was both pleasant and unfortunate. Pleasant because it was nicer than cold, rainy days but unfortunate because we didn’t have AC 😊 The only way to beat the heat was to make homemade ice cream. Yes, you read that correctly. We made ice cream, from scratch, while camping. And it’s actually quite easy. First, you need to purchase an Ice Cream Ball. The one we have is YayLabs! Soft Shell Ice Cream Ball. You can find it at your local sporting goods store or online by doing a simple Google search. They are reasonably priced and very fun to use. The ball has 2 sides that twist open. You add heavy cream, sugar, and vanilla to one side, and ice and ice cream salt to the other side. Creamy Cajun Chicken Pasta
Creamy Cajun Chicken Pasta is my newest weeknight recipe that your family will love! It’s a filling and delicious pasta that comes together in about 30 minutes. It’s rich, creamy, a little spicy, and packed with wonderful ingredients. I will admit…when I was originally working on this recipe it was going to be soup, not pasta, but plans changed, and soup just wasn’t in the cards that night. I blame the noodles for absorbing so much of the liquid that would have been yummy soup, but the recipe still turned into something great, and we had a lovely pasta dinner. Slow Cooker Chicken Philly Cheesesteak
Slow Cooker Chicken Philly Cheesesteak Sandwiches are loaded with tender chicken, bell peppers, and onions, piled high on a hoagie roll and covered in melted cheese. It’s a tasty meal that’s easy to make! I think it’s perfect on a cold winter night or on a busy weekend because your slow cooker is doing most of the work. The recipe can be found here. Start by placing the chicken in a slow cooker. I recommend using boneless skinless chicken breasts but if you prefer to use chicken thighs, make sure to trim some of the fat off first. Sprinkle with salt, pepper, garlic powder, and paprika. Season to taste. I tend to add more garlic powder because we love the flavor. Pour the chicken broth over the top and cover. Chicken Bacon Ranch Meatloaf
Meatloaf is a wonderful comfort food and if you’re from the Midwest…it’s a bit of a staple. It’s one of those meals you either love or hate. If you hate it, you probably ate it too much as a kid 😊 but I think you should give it one more chance and try my Chicken Bacon Ranch Meatloaf. I’m a chicken-bacon-ranch fan and consider myself to be somewhat of a CBR (chicken-bacon-ranch) connoisseur. If it’s available at a restaurant in some capacity, chances are I’ll order it. These low carb Hawaiian Pizza Chicken Tenders will be a new weeknight favorite! They are all the flavors of a traditional Hawaiian pizza but without the crust. Instead, the ingredients are piled on top of chicken tenders and baked to perfection. The recipe is amazing! The chicken is moist and tender, the Canadian bacon is lean and a little salty, the marinara sauce is fresh and herby, the pineapple adds a wonderfully sweet flavor, and the mozzarella really brings it all together. Chicken Jalapeno Popper Chili
We were craving chili this week and decided to try making Chicken Jalapeno Popper Chili. It’s incredibly flavorful without being too spicy. It’s loaded with tender chicken, beans, salty bacon, and creamy/brothy goodness. And it comes together so quickly! No slow cooking all day or simmering on the stove. You basically combine all ingredients in a large pot or Dutch oven, simmer for a short while, and dig in. It’s perfect when you want a warm and hearty meal but don’t have a lot of time. It also makes great leftovers to enjoy the next day or to freeze for a future meal. The recipe can be found here. Start by prepping your ingredients. Open Faced BBQ Chicken Sandwich are a great addition to any weekly menu! Simple to prepare, hearty, and comforting on a cold night. These open-faced sandwiches are very flavorful; crispy toast, melted cheese, BBQ rotisserie chicken that’s piled high, what’s not to love? They are yummy and come together in about 20 minutes (including prep and cook time). The recipe can be found here. Start by removing the rotisserie chicken from the bone. Shred it and set aside. You will only need about ½ the rotisserie chicken for this recipe. The recipe makes enough for 4 open-faced sandwiches. If you need more than 4, adjust the ingredients accordingly. The recipe I want to share with you today is for Baked Chicken Jalapeno Popper Flautas, which is a combination of jalapeno poppers and chicken flautas. They are made with shredded rotisserie chicken, cream cheese, shredded cheese, jalapeno, and tortillas. This recipe is very easy to make, doesn’t take a lot of time, and makes the perfect appetizer or meal, depending on how many people you are serving. Chicken with Parmesan Garlic Rice is a phenomenal weeknight meal! It combines pan seared chicken with a cheesy, garlic filled bed of rice. The chicken is perfectly seasoned and tender, the rice is soft and pillowy with lots of fragrant garlic and parmesan cheese mixed in, and it’s topped with fresh, crisp parsley.
