Jalapeno Popper Chicken Casserole is a favorite and easy to-to dinner when we are looking for something hearty and delicious.  It includes tender, juice chicken that is coated in a creamy mixture and topped with spicy jalapenos, shredded cheese, and crisp bacon.  This is a great recipe for lunch or dinner. Start by cooking the bacon according to package instructions.  If you are using rotisserie chicken (which I highly recommend), remove the chicken from the bones and shred.  If you are using boneless skinless chicken breasts (which also work just fine), cook and cube or shred.  You want the meat to be pre-cooked before assembling the dish. Sometimes in the winter months we look for lighter dinner options to break away from the warm and hearty meals people typically eat when it’s so cold out.  It makes us feel a little healthier and is a great way to get in those veggies 😊 We recently made a Mediterranean Grilled Chicken with Greek Dill Sauce and paired it with Mediterranean Yellow Rice as a side.  It was incredible!  The chicken was tender and juicy, and the rice was light and fluffy.  But the secret to what makes this recipe so good is the seasoning – it makes the dish really savory.  The chicken is prepared with allspice, nutmeg, and cardamon, and the yellow rice is prepared with turmeric and cumin, making both dishes a little sweet.  So run (don’t walk) to your local Festival Foods to gather ingredients to make this wonderful Mediterranean style dish today! Instant Pot Chicken Tortilla Soup is a wonderful meal that is made from scratch and is ready in a fraction of the time you would spend making this soup on the stove.  It’s hearty, spicy, and something the whole family will love.  You can even customize your toppings!  Add shredded cheese, cilantro, lemon wedges, tortilla chips – you name it! Start by prepping your ingredients.  Mince the garlic, mince the onion, drain and rinse the black beans, drain the corn, slice the cilantro, and slice the lime.  Set everything aside and get your Instant Pot ready. Instant Pot Chicken Pad Thai is better than takeout!  I never thought I would say that about a home cooked meal, but it really is.  It’s a one-pot dish that’s packed with chicken, veggies, noodles, and pad thai sauce.  It’s salty and nutty with just a hint of sweetness.  So, skip the takeout and give this a try! Chicken Fajita Pasta is a yummy one-pot recipe you will be sure to enjoy!  It’s creamy and packed with peppers, onions, and tender chicken in each bite.  The main selling point for me on this recipe is that you cook the entire meal in one-pot which means less dishes and easier clean up. The recipe can be found here. Start by slicing the chicken, onion, and bell peppers, and mince the garlic. Cajun Chicken Sloppy Joe’s is a wonderful weeknight meal!  It’s easy to make, is done in less than 30 minutes, and is packed full of flavor. The Cajun seasoning really bring this dish together and is a wonderful spice.  You can find it at your local Festival Foods or make a homemade version.  It pairs well with so many dishes – pasta, shrimp, steak, chicken, etc. and has a bit of a kick.  The bold, spicy flavor comes from the cayenne and the earthiness you tastes is from the herbs.  Pair the Cajun seasoning with some ground chicken, corn, onions, and melted cheese, and you have a delicious sandwich. I’ve been a big fan of “bowls” lately.  For example, instead of eating a stuffed bell pepper, I would eat the ingredients tossed together in a bowl.  Or instead of having an egg roll, the ingredients would be in a bowl….you get the picture.  My most recent bowl idea is for a Mediterranean Chicken Bowl.  It has a lemon-dill rice, wonderfully seasoned Greek chicken, a fresh cucumber and tomato salad, and yummy tzatziki sauce to bring it all together.  The flavors are rich and vibrant, and incredibly fresh.  It’s a light and healthy meal the whole family will love!
