Tender farro is paired with caramelized onions in this wonderful French Onion Farro recipe.  It’s a cross between French Onion Soup and a rice bowl and has a chewy texture and great flavor.  It works well as a main course or can be served as a side dish and is a one-pot recipe.  The recipe itself takes a while to prepare but it is quite effortless.  The most time is spent waiting for the onions to caramelize…and we all know how long that takes 😊 But otherwise you don’t have to fuss over the pan too frequently, making it a great weeknight meal.  This is also a meatless meal so it’s perfect for a vegetarian diet or if you participate in Meatless Monday.  If you omit the cheese, it is a vegan meal, so it’s very versatile! Farro with Chicken and Tomatoes is a one pot meal that is ready in about 30 minutes, making it great for a busy weeknight meal.  It’s warm and comforting without being overly filling so it’s something you can enjoy year-round.  This recipe is essentially a healthy grain bowl that’s packed with protein.  If you aren’t familiar with farro, it’s a bit heavier than quinoa and a bit chewier in my opinion, with a similar texture to rice.  It has a nutty flavor and is a perfect plant-based alternative to meat (if you have dietary restrictions) and is packed with protein and fiber. Are you in search of a healthy yet classic comfort food?  Look no further!  My recipe for Tomato & Thyme Farro is sure to please.  For those of you that don’t know what farro is, it’s a grain that is nutty and chewy with a texture similar to rice.  This dish is bursting with fresh flavors from the tomatoes, thyme, and basil.  It’s like risotto but much less work to create and uses farro in place of rice. The recipe can be found here. This recipe takes about 1 hour to 1 hour 15 minutes to make but the result is worth it! Start by melting butter in a large saucepan over medium heat.  Add the shallot (or use yellow onion) and cook until soft and translucent, about 3 minutes.  Add the garlic, salt, and pepper, and continue to cook for 1 minute.
