Chicken Egg Roll in a Bowl combines the delicious flavors of your favorite Chinese restaurant appetizer in a one pan! It’s a delicious spin on a classic egg roll. This dish is quick to make, healthy to eat, and will change the way you eat egg rolls 🙂 The recipe can be found here. Start by heating a large skillet over medium heat. Add the ground chicken and heat until completely cooked. You can also substitute ground turkey or ground pork, if preferred. Next, add the garlic powder, fresh ginger, green onion, and soy sauce to the skillet. Stir to combine and heat slightly. Next, add the coleslaw to the pan and stir to combine. Then add the chicken, season with salt and pepper, and cook until the chicken is about 80% done. Chicken Apple Chili
With the low temperatures we’ve had lately I want to hunker down and have a hot meal after work. Chicken Apple Chili is my new favorite go-to meal! It’s a bit non-traditional but is very easy to assemble, is light and refreshing, and is the perfect fall meal. Plus, it comes together in just a few hours (set it and forget it) so you aren’t waiting 4-8 hours like traditional chili. The recipe can be found here. You need a slow cooker for this one-pot recipe. Add all ingredients to the bowl of the slow cooker, except the apples, and stir together. Cover and cook on high for 2 hours. Mediterranean Munchies
With the cold weather approaching, I thought it would be fun to make a Mediterranean based meal, and imagine I’m in warmer weather, perhaps sitting on a beach somewhere 🙂 I made Chicken Gyros with Tzatziki Sauce for the main course and served Mediterranean Layered Hummus on the side. Both are easy to make, flavorful, and healthy! Chicken Gyros with Tzatziki Sauce are filled with spiced chicken, fresh veggies, and a tangy homemade sauce, and are served on warm pita bread. The tangy homemade sauce is Tzatziki Sauce, which is a Greek yogurt-based sauce with cucumber and fresh herbs added. These gyros are incredibly tasty! Start by preheating the oven. Instant Pot Cajun Chicken with Rice has become a family dinner favorite at my house. It’s easy to make, delicious, and something simple you can make in one pot. It’s the perfect comfort food on a cold night…or any busy night when you don’t have a lot of time to cook! Even better, it saves on dishes, so you don’t have to spend too much time on cleanup duty 🙂 The recipe can be found here. Start by chopping the veggies. Then slice the chicken breasts, either into 1-inch pieces or strips. Place the chicken in a bowl with 1 Tbsp Cajun seasoning and toss to coat. Beer Battered Chicken Sandwich with Lime Coleslaw
I love a good fried chicken sandwich and want to share my go-to recipe with you. This Beer Battered Chicken Sandwich with Lime Coleslaw is crispy, juicy, and doesn’t disappoint. The batter includes beer, giving it a light and crisp texture once fried, plus a slight beer flavor comes through in the crust and who doesn’t love that? I suggest using a brown ale for the best batter flavor but any malty ale or heavier seasonal beer (such as Oktoberfest) will work. You only use 2 cups of beer so you will have a little extra in the bottle to enjoy while you cook 🙂 The chicken is only fried once and then finished in the oven. Margarita Chicken is one of my new favorite dishes. It’s quick and easy to make, healthy, and a tasty meal you can enjoy all year round. The chicken is grilled to perfection, then topped with melted cheese, pesto, tomatoes, and basil. The recipe can be found here. Here’s how you make it: Start by combining the olive oil, salt, pepper, garlic powder, and Italian seasoning in a bowl. Add the chicken and toss to coat. In a separate bowl, combine the tomatoes, basil and lemon. Heat a skillet over medium-low heat. Cook the chicken on each side for about 8-10 minutes. I like to cook the chicken low and slow, so I don’t burn the meat if the chicken breasts are thick. You can always cover the skillet to help evenly distribute the heat. Is anyone else questioning why they live in MN with the weather we are having this week? If you are looking for a quick 30-minute meal, that is also warm and hearty, to get you through the cold weather I have the perfect solution. It’s Chicken Taco Soup. The soup is loaded with chicken, beans, corn, and tomatoes, and is packed full of flavor. Most of the item you probably already have in your pantry, so it’s easy to whip together during the week.
