Instant Pot Buffalo Chicken Mac & Cheese
Instant Pot Buffalo Chicken Mac & Cheese is a great one-pot meal that will blow your mind! It’s a twist on traditional mac & cheese that is easy to make and done in minutes. It’s super cream, full of tender chicken, and has a great spicy and tangy flavor from the addition of buffalo sauce. The recipe can be found here. Start by slicing the chicken into bite sized pieces. Add the chicken to a bowl and season with salt, pepper, and garlic powder. Toss to coat all pieces. Turn on the sauté function of the Instant Pot. Add a small amount of oil. Instant Pot Buffalo Chicken Dip
Instant Pot Buffalo Chicken Dip is the perfect recipe when you are looking for something quick and easy! It’s cheesy, filled with tender chicken, has a bit of heat (hope you can handle it :)), and comes together in very little time. It’s a great appetizer for game day or parties…or whenever you just need a little buffalo chicken kick! The recipe can be found here. Make sure the chicken is completely thawed and trim off any excess fat. Place the chicken in the bottom of the Instant Pot. Pour the hot sauce over the top. I like to use Frank’s Xtra Red Hot Sauce for a little extra heat. If you don’t want the added spice, use Frank’s Original Red Hot Sauce. Cheesecake is one of my favorite desserts. I love the crumbly crush, the sweet and creamy filling, and the variety of toppings you can use. It’s such a customizable dessert! I recently tried my hand at cheesecake bites made in an Instant Pot and let me tell you, they did not disappoint. They had the perfect texture, were just the right size to satisfy a craving, and took very little time to make. Please note, you will need not only an Instant Pot but also an Instant Pot Silicone Egg Bites Mold to make either of these recipes. My first batch was Instant Pot Oreo Cheesecake Bites. This is the easiest cookies and cream dessert you will ever make. The “crust” is one Oreo and the filling has crushed Oreos mixed in. Mexican Chicken and Rice is incredible! It has the best mesquite BBQ flavor, which is slightly sweet and smoky, and it pairs perfectly with Instant Pot Mexican Rice. Both the chicken and rice are pretty simple to assemble so this is a great go-to meal for any day of the week! The Mexican Chicken recipe can be found here. The Instant Pot Mexican Rice recipe can be found here. Start by placing the (thawed) boneless skinless chicken breasts in a large Ziploc bag. Then pour the entire bottle of Lowry’s marinade into the bag and toss to coat. Make sure the bag is completely seals and place in the fridge to marinate for at least 30 minutes, but ideally up to 2 hours. Terrific Turkey Dinner
One of my favorite Thanksgiving traditions from my childhood was getting up early to help my mom prepare all the food. We’d spend hours in the kitchen chopping vegetables, assembling casseroles, prepping the turkey (one in the oven and one on the grill), and baking pies. We would clean up and get ready for the day while everything was baking in the oven, then we’d wait for company to arrive. It was the best! This year, I’m thinking of changing the plan. Why not do something a little simpler and less time consuming so we can enjoy each other’s company and spend the day with family? The holidays are busy enough without spending hours in the kitchen, so I want to create a menu that is delicious but also fairly quick to put together. Instant Pot Cajun Chicken with Rice has become a family dinner favorite at my house. It’s easy to make, delicious, and something simple you can make in one pot. It’s the perfect comfort food on a cold night…or any busy night when you don’t have a lot of time to cook! Frittata’s make a great breakfast, brunch or brinner (breakfast for dinner as we call it at our house). A frittata is an egg-based dish, similar to an omelet or quiche, with your choice of veggies, meat, or cheese inside. I like to make frittata’s in an Instant Pot because it requires a lot less work – use one pot, set the timer, and go about your day until the timer ends.
