Wing Time
If you read my last blog, you know how much we love sandwiches (or sliders) at our house. Another food we are obsessed with is chicken wings. They are so easy to make and can be pair with tons of different sauces to create different flavor combinations. Looking for a quick and easy weeknight meal that is also flavorful and delicious? Look no further! Meatless Monday has a new fan favorite…. Lentils & Vegetables in Peanut Sauce. This is a vegan / vegetarian meal that’s packed with fresh vegetables and protein. I chose some of my favorite veggies to use in this dish, but you can add any veggies you like. You can add mushrooms, squash, snap peas, you name it! The peanut sauce is what really brings it all together. It’s bursting with flavor and is rich and creamy. Creative Cauliflower Meals
When most people think of cauliflower, they probably don’t get excited. It’s just another vegetable with a bland flavor…blah blah blah…but it’s so much more! It’s packed with fiber and B-vitamins, is incredibly versatile, and is one of my favorite vegetables to create meals with. You can create a full meal with one head of cauliflower. Roast it, put it in soup, make pizza crust or rice, etc. I however, like to make Chinese inspired dishes with cauliflower. We did “Chinese Food Week” at our house and created some amazing meals! Greek Lemon Rice with Chickpeas
Greek Lemon Rice with Chickpeas is an amazing one-pot dish! It is full of great Mediterranean flavors and is packed with so many herbs and veggies. You’ll think you’re somewhere warm and sunny when eating this dish 🙂 The recipe can be found here. Preheat the oven to 375 degrees. Make sure you have a large ovenproof skillet to use. You will start by heating ingredients on the stove and will eventually move the skillet into the oven, so you want to make sure you are using something rated for oven use. I used a large cast iron skillet, but a Dutch Oven would also work well. Prep all of your ingredients. We’ve been eating a lot of meatballs at our house lately! Our idea was to take traditional dishes and turn them into meatballs. The idea is you get the same great taste but in bite-sized morsels. The recipes I’m going to share with you today are easy to assemble, wonderful weeknight dinner options, crowd pleasers, and make great leftovers! Chicken Egg Roll in a Bowl
Chicken Egg Roll in a Bowl combines the delicious flavors of your favorite Chinese restaurant appetizer in a one pan! It’s a delicious spin on a classic egg roll. This dish is quick to make, healthy to eat, and will change the way you eat egg rolls 🙂 The recipe can be found here. Start by heating a large skillet over medium heat. Add the ground chicken and heat until completely cooked. You can also substitute ground turkey or ground pork, if preferred. Next, add the garlic powder, fresh ginger, green onion, and soy sauce to the skillet. Stir to combine and heat slightly. Next, add the coleslaw to the pan and stir to combine. Instant Pot Cajun Chicken with Rice has become a family dinner favorite at my house. It’s easy to make, delicious, and something simple you can make in one pot. It’s the perfect comfort food on a cold night…or any busy night when you don’t have a lot of time to cook! Even better, it saves on dishes, so you don’t have to spend too much time on cleanup duty 🙂 The recipe can be found here. Start by chopping the veggies. With a little over a week to go, Thanksgiving will be here before we know it. Are you ready? I’m in full planning mode. Making my guest list, creating a menu, finding the perfect table linens, etc. The most important part of planning in my opinion is the food. If you plan a menu full of delicious food, yet items that won’t require you to spend the entire day in the kitchen, you can spend that time with family instead.
